- 2 cups cooked chickpeas, or one 15-ounce can, drained and rinsed
- 4 cloves garlic, peeled and chopped
- Zest and juice of 1 lemon
- 1 teaspoon cumin, toasted and ground

Combine all the liquid ingredients in a large pitcher and stir to combine well
- 2 cups good vodka (recommended: Belvedere, Grey Goose)
- 2 cups iced tea (recommended: Pom Iced Tea)
- 2 cups lemonade (lemon juice and sugar in a 4:3 ratio, plus water)
- Mint sprigs, for garnish
- Optional changes: citron vodka, a splash of seltzer, a sprig of mint

Kale & Walnut Pesto

- small bunch of kale (4-6 leaves, remove the thick part of the stems)
- 1/4 cup walnuts, toasted
- 1/2 to 1 clove of garlic
- 1/4 cup olive oil (or more for a smoother pesto)
- juice & zest of one lemon
- salt & pepper to taste
- optional: grated parmesan or pecorino cheese

- 1 cup fresh baby spinach, chopped
- 2 tablespoons finely chopped red onion
- 2 tablespoons finely chopped sweet red pepper
- 1 jalapeno pepper, seeded and minced
- 1 tablespoon canola oil
- 1/3 cup frozen corn, thawed
- 1/4 cup black beans, rinsed and drained
