Carrot and Cauliflower Stir-fry

There's plenty of crunch in this tasty, quick-cooking supper dish, which is high in fiber but very low in fat
- 1 Tbsp olive oil
- 1 bay leaf
- 2 cloves
- 1 small cinnamon stick
- 2 cardamom pods
- 3 black peppercorns
- 1 tsp salt
- 2 large carrots, cut into thin batons (matchsticks)
- 1 small cauliflower, broken into florets
- 1/2 cup frozen peas
- 2 tsp lemon juice
- 1 Tbsp chopped fresh coriander
- fresh coriander leaves, to garnish
Four Bean Chili Crock Pot

A great recipe for a crowd
- 2 Tbsp Vegetable or Canola Oil, divided
- 1 Large Onion, chopped
- 2 Garlic Cloves, minced
- 1 Lb Lean Ground Beef
- 1-15 Oz Can White Beans, rinsed and drained
- 1-15 Oz Can Kidney Beans, rinsed and drained
- 1-15 Oz Can Pinto Beans, rinsed and drained
- 1-15 Oz Can Black Beans, rinsed and drained
- 1-28 Oz Can Chopped Tomatoes with Juice
- 2-15 Oz Cans Tomato Juice
- 2 Tbsp Chili Powder
- 1 Tbsp Cumin
- 2 Bay Leaves
- 2 Tsp Salt
- Accompaniments: Sour Cream, Yogurt, Grated Cheddar Cheese, Scallions, Hot Sauce (if you want to take it up a notch)

1 Coat slow cooker bowl with nonstick cooking spray
- 11/2 cups all-purpose flour
- 11/2 tsps pumpkin pie spice
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 5 tbsps unsalted butter (softened)
- 1/2 cup light brown sugar
- 1 eggs
- 1/4 cup buttermilk
- 1 cup unsweetened applesauce
- pecans
- caramel sauce
- whipped topping

- 1 3/4 cups apple cider (buy sweetened, unfiltered version. In the refrigerator section)
- 1/2 cup brandy
- 1/4 cup orange juice
- Juice from one lemon
- Club soda to taste
