  • 1 tsp salt
  • 2 large carrots, cut into thin batons (matchsticks)
  • 1 small cauliflower, broken into florets
  • 1/2 cup frozen peas
  • 2 tsp lemon juice
  • 1 Tbsp chopped fresh coriander

  • 1-28 Oz Can Chopped Tomatoes with Juice
  • 2-15 Oz Cans Tomato Juice
  • 2 Tbsp Chili Powder
  • 1 Tbsp Cumin
  • 2 Bay Leaves
  • 2 Tsp Salt
  • Accompaniments: Sour Cream, Yogurt, Grated Cheddar Cheese, Scallions, Hot Sauce (if you want to take it up a notch)
