Cucumber Dill Dip

Beat cream cheese until smooth
- 1 - 8 oz. pkg. cream cheese, softened
- 1 c. mayonnaise
- 2 med. cucumbers, peeled, seeded and chopped
- 2 Tbsp. sliced green onion
- 1 Tbsp. lemon juice
- 2 tsp. fresh snipped dill, or 1/2 tsp. dry dillweed
- 1/2 tsp. hot pepper sauce
Hot Cajun Spice Mix

Combine all ingredients in jar or container with an airtight lid
- 2 Tbsp. salt
- 1-1/2 Tbsp. garlic powder
- 1-1/2 Tbsp. onion powder
- 1 Tbsp. sweet paprika
- 1 Tbsp. cayenne pepper
- 1 Tbsp. black pepper
- 1 Tbsp. white pepper
- 1 Tbsp. dried sweet basil or oregano
- 1 Tbsp. dried thyme
Summer Fruit Salad

In a medium-size salad bowl, whisk together honey and lime juice
- 1 pear, cored and cubed
- 2 apples, cored and cubed
- 1 c. cubed melon
- 2 kiwi fruit, peeled and cubed
- 1/2 pint fresh berries, cut into bite-size pieces (if needed)
- 1 Tbsp. fresh mint, chopped
- 2 Tbsp. lime juice
- 1 Tbsp. honey
Auckland Spinach Salad

Place spinach, kiwi, tomato, onion, and cheese in a serving bowl
- 2 qt. spinach, washed and torn into bite-size pieces
- 3 kiwi fruit, peeled and sliced
- 1 large tomato, cut into thin wedges
- 1 c. red onion slices
- 1 c. crumbled feta cheese
- 1 c. croutons
- 1/3 c. olive oil
- 1/4 c. dill or white wine vinegar
- 1 Tbsp. dijon mustard
- 1 clove garlic, minced or pressed
- 1/2 tsp. dried dill weed
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Stacked Green Enchilada Casserole

Preheat oven to 350 degrees
- 1-1/2 lb. ground beef
- 2 doz. corn tortillas
- 1 family-sized can cream of mushroom soup
- 2 cans Old El Paso green enchilada sauce
- 10 oz. pkg. longhorn cheddar cheese
- Water (fill mushroom soup can 1/2 to 3/4 full)
- 1 small can chopped green chilis (more if you like)
- Salt and pepper to taste (other seasonings can be added to taste)
- Oil for frying tortillas
Black Bean & Rice Salad

Prepare rice as directed; cool
- 1 - 4.8 oz. box Kraft Rice & Cheese Broccoli Side Dish
- 1/2 c. Miracle Whip salad dressing
- 1/2 tsp. black pepper
- 1/4 tsp. lemon zest
- 1 c. diced yellow pepper
- 1 c. diced red pepper
- 1/4 c. sliced green onion pieces
- 1 - 15 oz. can black beans, drained
Joann's Burritos

Combine beans and salsa in a large saucepan
- 1 pkg. burrito-sized flour tortillas
- 1 jar salsa
- 2 cans refried beans
- 1 pkg. shredded cheddar cheese
- Optional: Cooked ground beef or shredded chicken
Good Soup

Brown meat and onions in a large soup pot or Dutch oven
- 1 lb. ground beef
- 1 can Ranch-Style Beans
- 1 can Rotel Chilis and Tomatoes
- 1 small jar Cheez Whiz
- 1 small onion
- 1-2 cans minestrone soup
- 1 can water
- Seasonings, to taste
Chicken & Noodles

Place chicken in large soup pot or Dutch oven and cover with water
- 1 fryer chicken, cut into pieces
- 1 tsp. chickn bouillon granules
- Salt & pepper, to taste
- 1 lb. wide egg noodles
- 1 large can chicken broth
