Football Party Dip

Combine all ingredients in a large bowl
- 4 8-oz. pkg. cream cheese, softened
- 2 packets Ranch Dressing/Dip Mix
- 1-3/4 c. diced red bell pepper
- 2 cans diced black olives, drained
- 1 4 oz. can chopped green chilis, drained
Chicken Sopa

Preheat oven to 350 degrees
- 4 c. cooked chicken, cubed
- 1 can tomato soup, undiluted
- 1 can cream of chicken soup, undiluted
- 1 onion, minced
- 1-8 oz. pkg. shredded cheddar cheese
Spice Dip

Combine sugar and spices. Fold into Cool Whip
- 1/4 c. firmly packed brown sugar
- 1/8 tsp. cinnamon
- 2 c. Cool Whip, thawed
- Dash of nutmeg
Tortilla Roll-ups

Combine all ingredients, except tortillas, and mix well
- 2 8-oz. pkg. cream cheese, softened
- 1 pkg. large sized flour tortillas
- 1 sm. can chopped black olives, drained
- 1 sm. can chopped green chilis, drained
- 2 Tbsp. chopped green onion
- 5 oz. lunch meat, chopped (can be turkey, ham, chicken, etc.)
- 1 tsp. garlic powder
- 1/4 tsp. cracked black pepper
Shirley Ralston's Clam Chowder

Place butter and onion in a 4-qt
- 1 c. chopped onion
- 1/4 c. butter
- 1-10 oz. can clams, with liquid
- 2-10 1/2 oz. cans New England Clam
- Chowder
- 2-10 1/2 oz. cans potato soup
- 2 2/3 c. milk
- 1 can evaporated milk
- salt and pepper, to taste
Cheesy Stuffed Mushrooms

Preheat broiler. Fill mushroom caps with whipped cream cheese and place on broiler pan
- 1-1/2 lb. medium mushrooms, cleaned, stems removed
- 1 - 8 oz. container whipped cream cheese, with chives
Posole

Place pork roast in soup pot and cover with water
- 2 lb. pork roast
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 bay leaf
- 1/2 tsp. ground cumin
- 1 tsp. Mexican oregano
- 2 cans (15-1/2 oz.) hominy, drained
- 2 cans (10 oz.) green enchilada sauce
- 1 can (12 oz.) V8 juice
- 2 cans (4 oz.) chopped green chilies
- 1 large onion, chopped
Tomatillo-Lime Salad Dressing

In a blender or food processor, combine everything except mayonnaise; process until tomatillos are finely chopped
- 10 tomatillos, quartered
- 1/4 c. fresh cilantro sprigs
- 3 cloves fresh garlic, crushed
- 2 Tbsp. coarsely chopped red onion
- 1/4 c. lime juice
- 1-1/2 Tbsp. honey
- 1 tsp. red wine vinegar
- 1/8 tsp. cayenne pepper
- 1/8 tsp. lime zest
- 1-1/2 c. mayonnaise
Grandmother Walker's Vegetable Soup

Place stew meat in a dutch oven and cover with water (about 2 inches above the meat)
- 1/2 lb. stew meat
- 4 carrots, chopped
- 2 potatoes, chopped
- 2 onions, diced
- 4 ribs celery, diced
- 1 c. finely minced cabbage
- 1-15 oz. can tomato sauce
- 1 tsp. seasoned salt
- 2 tsp. oregano
- 1 bay leaf
- 1 tsp. thyme
- 1 tsp. garlic powder
"Lucky" Bean Soup

Wash bean mix. Put in large bowl and fill bowl with water; soak over night
- 1 pkg. dried bean mix
- 3 ribs + 6 ribs celery, divided & chopped
- 2 bay leaves
- 1/2 tsp. dried thyme
- Ham bone, ham hocks, diced ham, as desired
- 1 can Ro-Tel tomatoes, undrained
- 2 med. onions, chopped
- 2 cloves garlic, chopped
