Green Onion Potato Cakes

Combine potatoes, egg, onion and seasonings, and form into 4 patties
- 2 c. mashed potatoes
- 1 egg, lightly beaten
- 1/4 c. chopped green onion
- Seasonings, to taste
- Flour, for dredging
- Oil or fat, for frying
Eclair Cake

Combine pudding mix and milk; whisk until thickened
- 1 box graham crackers
- 1 large or 2 small boxes instant
- vanilla pudding
- 3 c. milk
- 1-12 oz. tub whipped topping
- 1 tub fudge frosting
Chocolate Pound Cake

Preheat oven to 325 degrees
- 2 c. milk chocolate chips
- 1/2 c. butter or margarine
- 2 c. sugar
- 4 eggs
- 2 tsp. vanilla
- 1 c. buttermilk
- 2 Tbsp. water
- 2-1/2 c. sifted cake flour
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1/2 c. chopped pecans (optional)
- Powdered sugar (optional)
Pasta Salad Dressing

Combine all ingredients. Toss with cooked, cooled pasta
- 1 egg, lightly beaten
- 1/2 c. oil
- 1/4 c. white wine vinegar
- 1-2 cloves garlic, pressed
- 1/8 tsp. ground cloves
- 1/4 grated parmesan
- Salt and pepper, to taste
Hot & Spicy Beef & Beans

Preheat oven to 350 degrees
- 1 lb. boneless beef for stew, cut into 1/2-inch cubes
- 1 can (15-1/2 oz.) red kidney beans, rinsed and drained
- 1 small green bell pepper, chopped
- 1 bay leaf
- 1/4 c. bottled teriyaki baste & glaze
- 1 large clove garlic, pressed
- 1 t. ground cumin
- 3/4 t. paprika
- 1/4-1/2 t. cayenne pepper
- 3/4 t. white vinegar
- 1/4 c. minced onion
Quiche Lorraine Appetizer

Preheat oven to 450 degrees
- Pastry for Crust:
- 1 c. Wondra flour
- 1/2 tsp. salt
- 1/3 c. + 1 Tbsp. shortening
- 2-3 Tbsp. cold water
- Filling:
- 6 slices bacon, fried and crumbled
- 3/4 c. shredded swiss cheese
- 2 Tbsp. finely chopped green onions
- 2 eggs
- 1 c. whipping cream
- 1/4 tsp. salt
- Dash of ground red pepper
Fudgy Chocolate Brownies

- 5 Tbsp. margarine or butter
- 1 oz. unsweetened chocolate
- 1/3 c. Dutch process (unsweetened) cocoa
- 1-1/2 c. sugar
- 3 large egg whites, lightly beaten
- 1 large egg, lightly beaten
- 1 c. all-purpose flour
- 1/2 tsp. baking powder

Bruschetta

In a large bowl, combine the tomatoes, chopped garlic, olive oil, vinegar, basil, salt and pepper
- 8 Roma tomatoes, seeded and finely chopped
- 3 cloves garlic, finely chopped
- 5 Tbsp. extra virgin olive oil
- 2 Tbsp. Balsamic vinegar
- 3 Tbsp. fresh basil, finely chopped
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1 baguette, 2-1/2 to 3 inches in diameter, cut into 20 1/4-inch slices
- 3 whole garlic cloves
Emeril's Gumbo

Heat oil in a large pot. Fry okra, stirring constantly, 10-12 minutes, or until most of the slime disappears
- 1/4 c. vegetable oil
- 2 lbs. okra, washed in cold water, caps removed, cut into 1/4 inch rounds
- Emeril's Essence
- 2 c. tomatoes, peeled, seeded and chopped
- 1 c. chopped onion
- 1 c. chopped celery
- Salt
- Cayenne pepper
- 5 bay leaves
- 1/2 tsp. dried thyme leaves
- 1 Tbsp. minced garlic
- 8 c. water
- 2 lbs. medium shrimp, peeled and deveined
- 2 c. cooked white rice, warm
- 2 Tbsp. chopped green onion
Fried Okra Salad

- 16 okra pods, washed and cut in half lengthwise
- 1 c. buttermilk
- Essence
- 1 c. mayonnaise
- 1/2 c. finely chopped green onion
- Juice of 1 lemon
- 1 tsp. Dijon mustard
- 1 Tbsp. minced garlic
- Salt and pepper
- 1/2 c. cornmeal
- 1/2 c. flour
- 4 c. assorted baby greens
- 4 grilled green onions
- 2 Tbsp. chopped chives
- 1/2 c. grated parmesan cheese
