- 1/4 c. minced onion
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/4 tsp. black pepper
- 3/4 tsp. salt
- 1 cube beef boullion
- 4 c. tomato juice
- 2 c. milk

In a mixing bowl, toss chicken with 1 Tbsp
- 2 boneless, skinless chicken breasts, cut into 1/2-inch cubes
- 1 Tbsp. + 1/2 Tsp. soy sauce, divided
- 1 Tbsp. cornstarch
- 1 Tbsp. cooking oil
- 1 c. chopped onion
- 2 tsp. minced garlic
- 1/2 tsp. grated gingerroot
- 1/4 tsp. pepper
- 1/4 tsp. sesame oil
- 4 cans (14-1/2 oz.) chicken broth
- 2 oz. vermicelli, broken in half
- 1/2 c. julienned carrots
- 1/2 c. julienned celery
- 1-8 oz. can sliced water chestnuts, drained
- 1 package (6 oz.) frozen snow peas
- 1 Tbsp. minced cilantro for garnish
Cooking Light's Fudgy Chocolate Brownies

- 5 Tbsp. stick butter or margarine
- 1 oz. unsweetened chocolate
- 2/3 c. Dutch process or unsweetened cocoa
- 1-1/2 c. sugar
- 3 large egg whites, lightly beaten
- 1 large egg, lightly beaten
- 1 c. all-purpose flour
- 1/2 tsp. baking powder

Put chicken pieces in a large bowl and sprinkle kosher salt over
- 1 Small fryer (less than 3 lbs.) cut into pieces. You want a fryer that has NOT been previously frozen.
- 3 tsp. kosher salt
- Salt, to taste
- 1/2 tsp. cayenne pepper
- 3 c. buttermilk
- 1 tsp. cracked black pepper
- 2 onions, thinly sliced
- 1 c. vegetable shortening
- 1 c. flour
- 1/4 c. butter

In a large bowl, combine tomatoes, minced garlic, olive oil, vinegar, basil, salt and pepper
- 8 Roma tomates, seeded and finely diced
- 3 Garlic cloves, minced
- 5 Tbsp. extra-virgin olive oil
- 2 Tbsp. balsamic vinegar
- 3 Tbsp. fresh basil, finely chopped
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1 baguette, 2-1/2 to 3 inches in diameter, cut in about 20 1/4-in. slices
- 3 whole garlic cloves
New Mexico Potato Salad

In a blender or food processor, beat egg yolks, mustard, vinegar and lime juice together
- 16 New Potatoes, boiled and sliced into bite-sized chunks
- 2 egg yolks
- 1 Tbsp. red wine vinegar
- 1 Tbsp. dijon mustard
- 1-1/2 c. oil
- Juice of 1 lime
- 2 Tbsp. chopped fresh cilantro
- 1/2 Tbsp. minced fresh jalapeno peppers
- 1/2 Tbsp. minced red onion
- 1/2 tsp. cayenne pepper
- 1 clove garlic, minced
Cheesy Artichoke Heart Appetizers

- 2 8-oz. cans refrigerated crescent rolls
- 3/4 c. (3 oz.) shredded mozzarella cheese
- 3/4 c. (3 oz.) grated parmesan cheese
- 1/2 c. Miracle Whip salad dressing
- 1 14-oz. can artichoke hearts, drained and finely chopped
- 1 4-oz. can chopped green chilis, drained
