Tortilla Pinwheels

Lay out flour tortillas on a work surface
- 1 pkg. large flour tortillas
- 2 - 8 oz. pkg. cream cheese, softened
- Seasonings, as desired
- Thinly sliced deli meats, as desired
- Pickles, chilis, onions, olives, peppers, etc., as desired.
French Chateau Chicken

Prepare rice according to directions
- 1 box Uncle Bean's Long Grain & Wild Original Rice Recipe
- 6 boneless, skinless chicken breasts
- 12 oz. Boursin cheese
- 6-12 slices maple smoked bacon
Rustic Tomato-Bread Salad

Combine all ingredients, except bread, in a large bowl; let stand, allowing flavors to develop, about 10 minutes
- 4 c. fresh tomatoes, diced (about 5 med. tomatoes)
- 3/4 c. slivered red onion
- 1/2 c. water
- 1/3 c. olive oil
- 1/3 c. white wine vinegar
- 1 tsp. ground black pepper
- 1 tsp. salt
- 1 tsp. sugar
- 1/2 c. shredded fresh basil
- 6 c. day-old, dense, crusty bread, cut or torn into 1-inch cubes
Spinach Dip

Combine all ingredients until well mixed
- 1 - 10 oz. pkg. frozen spinach, thawed and drained
- 1-1/2 c. sour cream
- 1 c. mayonnaise
- 1 pkg. Knorr Vegetable Soup & Recipe Mix
- 1 - 8 oz. can water chestnuts, drained & chopped
- 3 green onions, chopped
Layered Pumpkin Dessert

Slice Twinkies in half lengthwise and place cream-side up, in a single layer, in a 9"x13" baking dish
- 1 pkg. (15 oz.) Hostess Twinkies (10 Twinkies)
- 1 pkg. (8 oz.) cream cheese, softened
- 1 c. confectioner's sugar
- 1 container (8 oz.) frozen nondairy whipped topping, thawed, divided
- 2 pkg. (3.4 oz.) instant vanilla pudding
- 1 can (15 oz.) pumpkin
- 1-1/2 tsp. pumpkin pie spice
- 1 c. milk
- Additional pumpkin pie spice for garnish
Bread & Butter Pickles

Combine cucumbers, peppers, onions, salt and ice in a large dutch oven
- Syrup:
- 1 gallon cucumbers, unpeeled, sliced
- paper thin
- 2 bell peppers, sliced into fine shreds
- 8 small onions, sliced paper thin
- 1/2 c. salt
- 8 c. ice cubes
- 1-1/2 tsp. turmeric
- 5 c. sugar
- 2 Tbsp. mustard seeds
- 1/2 tsp. ground cloves
- 1 tsp. celery seed
- 5 c. vinegar
Mandarin Orange & Tabasco Salad

In a large salad bowl, combine salad ingredients
- Salad:
- 2 cans mandarin oranges, drained
- 1/2 c. slivered almonds
- 1 head lettuce, washed and torn
- 1-1/2 c. chopped celery
- 4 green onions, chopped
- Dressing:
- 1/2 tsp. Tabasco Sauce
- 4 Tbsp. sugar
- 4 Tbsp. tarragon vinegar
- 2 Tbsp. snipped parsley
- 1/2 c. salad oil
- Salt & pepper, to taste
Potato Pancakes

Combine eggs and milk in a blender
- 1 egg
- 1/2 c. milk
- 4 potatoes, peeled and sliced
- 1/2 onion, sliced
- 1/2 c. all-purpose flour
- 1 tsp. salt
- 1/4 tsp. black pepper
- Dash of nutmeg
Chicken in Creamy Mushroom Sauce

In a large skillet, saute chicken in 1-2 Tbsp
- 1 lb. boneless, skinless chicken breasts, cut into chunks
- 2-3 Tbsp. olive oil
- 1 sm. onion, diced
- 1 green bell pepper, diced
- 1 c. sliced mushrooms
- 1/2 tsp. garlic powder or 1 clove fresh garlic, diced
- Salt & pepper, to taste
- 2 cans fat-free cream of mushroom soup
9-Day Salad

- 1 head of cabbage, chopped
- 1 onion, chopped
- 1 green pepper, chopped
- 1 c. sugar
- 1-1/2 c. oil
- 1/3 c. vinegar
- 1 tsp. celery seed
- 1 tsp. salt
