Tomatillo-Lime Salad Dressing

Ingredients

• 10 tomatillos, quartered
• 1/4 c. fresh cilantro sprigs
• 3 cloves fresh garlic, crushed
• 2 Tbsp. coarsely chopped red onion
• 1/4 c. lime juice
• 1-1/2 Tbsp. honey
• 1 tsp. red wine vinegar
• 1/8 tsp. cayenne pepper
• 1/8 tsp. lime zest
• 1-1/2 c. mayonnaise

Preparation

Step 1

In a blender or food processor, combine everything except mayonnaise; process until tomatillos are finely chopped. Transfer to a medium bowl and stir in mayonnaise. Cover and chill.
