Balsamic Pea Salad

Place peas in a colander, and run warm water over them until they are thawed
- "I quickly make this the night before I need it as it tastes much better if it sits overnight. My daughter and her friend will not eat peas, but they love this salad."
- 1 (16 ounce) package frozen green peas
- 1/2 cup chopped almonds
- 1/2 cup chopped green onions
- 1/2 cup crumbled feta cheese
- 3/4 cup mayonnaise
- 2 tablespoons balsamic vinegar
- black pepper to taste
Arugula and Beefsteak Salad with Tomato Vinaigrette

Sprinkle steak with pepper; grill or pan-fry until medium-rare
- Tomato Vinaigrette:
- 8 oz (250 g) beef grilling steak (rib eye, strip loin or tenderloin)
- 1/4 tsp (1 mL) black pepper
- 8 cups (2 L) arugula leaves
- 2 mini- cucumbers (or half English cucumber)
- 1/3 cup (75 mL) thinly sliced sweet onion
- 1/3 cup (75 mL) shaved or shredded Parmesan cheese
- Half small clove garlic, pressed
- 2 tsp (10 mL) balsamic vinegar
- 2 tsp (10 mL) red wine vinegar
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) anchovy paste
- 1/4 cup (60 mL) extra-virgin olive oil
- 1/3 cup (75 mL) finely chopped seeded drained canned tomato

- 8 cups Low Sodium Chicken Broth
- 1 whole Medium Onion, Diced
- 2 whole Green Bell Peppers, Diced
- 2 stalks Celery, Diced
- 2 whole Fresh Jalapenos, Diced
- 1 Tablespoon Olive Oil
- 1 can (28-ounce) Can Whole Tomatoes
- 2 cups Heavy Cream
- 1/3 cup Extra Virgin Olive Oil
- 4 Tablespoons Minced Fresh Oregano

- 1/2 cup packed brown sugar

Oatmeal Raisin Cookies

Combine eggs & vanilla, soak raisins within for 1 hour
- 2 eggs
- 1 c raisins
- 1 t vanilla
- 1 c butter, softened
- 1/2 c brown sugar
- 1/2 c sugar
- 1 1/4 c flour (reduce if making without raisins)
- 1/2 t salt
- 1 t cinnamon
- 1 t baking soda
- 3 c oatmeal
- 3/4 c pecans (opt)
Chicken Lettuce Wraps

Directions Prepare the chicken: Whisk the egg white, cornstarch and rice wine in a bowl
- For the Chicken:
- 1 large egg white
- 1 tablespoon cornstarch
- 1 tablespoon Chinese rice wine or dry sherry
- 1 1/2 pounds skinless, boneless chicken breasts, diced
- For the Stir-Fry Sauce:
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon Chinese rice wine or dry sherry
- 1 teaspoon toasted sesame oil
- 2 teaspoons cornstarch
- For the Noodles:
- 2 bundles cellophane noodles
- Peanut oil, for frying
- For the Stir-Fry:
- 4 tablespoons peanut oil
- 3 cloves garlic, minced
- 1 teaspoon minced peeled ginger
- 1 jalapeno pepper, seeded and minced
- 4 scallions; 2 minced, 2 cut into 1-inch pieces
- Kosher salt
- 1/4 teaspoon sugar
- 1/2 pound shiitake mushrooms,stemmed and diced
- 3/4 cup diced water chestnuts
- Small lettuce leaves, for serving
- Soy sauce, chili paste and/or hot mustard, for serving
Peanut Butter Blondies

Beat eggs well. Add sugars, blend in peanut butter, vanilla and melted butter
- 3 eggs
- 1 c. granulated sugar
- 3/4 c. brown sugar
- 3/4 c. smooth peanut butter (incr by 1/4c if using chunky PB)
- 1/2 c. butter (melted)
- 1 tsp. vanilla
- 1 1/2 c. sifted flour
- 3/4 tsp. baking powder
- 3/4 tsp. salt
- 1/8 tsp. baking soda
- 1 c. nutmeats (walnuts, pecans or peanuts)
Horse Cake
