Torciano's Olive Sauce

This delicious sauce is perfect with short pasta, particularly pennette and rigatoni, which combine with it better
- 100 g Sweet Black Olives
- 100 g Green Olives in their seasoning liquid
- 100 g Garlicky Green olives
- 50 g Garlicky Black Olives
- 4 Red-Skinned Onions
- 2 Cloves of Garlic
- 1 L Tomato Purée (or the equivalent of canned tomatoes)
- Chilli Pepper
- Extra Virgin Olive Oil
Mexican Chopped Salad with Honey Lime Dressing

Toss all salad ingredients in a large bowl
- Salad
- 2 1/2 cups chopped romaine lettuce
- 1 can (15.5 oz) black beans, rinsed and well drained
- 3/4 cup chopped seeded tomato
- 3/4 cup chopped peeled jicama
- 3/4 cup fresh corn kernels, uncooked (or frozen or canned)
- 3/4 cup thinly sliced radishes
- Half a ripe avocado, diced
- 1 red bell pepper, chopped
- 1/4 cup crumbled reduced-fat feta cheese
- Honey-Lime Dressing
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 2 tbsp honey
- 2 tbsp finely chopped fresh cilantro
- 1 garlic clove, peeled and minced
- 1 tsp chopped jalapeño pepper (use canned for less heat)
Asparagus and Gruyère Tart

Make crust: Roll out pastry dough on a floured surface into a 15 1/2-inch round
- Pepper & Sour Cream Pastry Dough:
- 2 1/4 cups all-purpose flour
- 1 teaspoon salt
- 3/4 teaspoon black pepper
- 3/4 teaspoon sugar
- 11/4 sticks (10 tablespoons) cold unsalted butter, cut into bits
- 1/3 cup cold vegetable shortening
- 3 tablespoons sour cream
- 3 tablespoons ice water
- 3 pounds thick white or green asparagus, trimmed to 6 inches and peeled
- 1/2 teaspoon kosher salt plus additional for sprinkling
- 1 cup heavy cream
- 2 large eggs
- 1/4 teaspoon freshly grated nutmeg
- 1 cup finely grated Gruyère
- Special equipment: a round pizza pan (13 inches in diameter, not including rim) and pie weights or raw rice
Sour Cream Pork Chops

Season pork chops with salt, pepper, and garlic powder, and then dredge in 1/2 cup flour
- 6 pork chops (I prefer shoulder over loin chops)
- salt and pepper to taste
- garlic powder to taste
- 1/2 cup all-purpose flour
- 1 large onion, sliced 1/4 inch thick
- 2 cubes chicken bouillon (I prefer STAR brand)
- 2 cups boiling water
- 2 tablespoons all-purpose flour
- 1 (8 ounce) container sour cream
Plum (or other fruit) Pie

In bowl, combine first 6 ingredients; pour into pastry shell
- 4 cups sliced plums
- 1/2 cup sugar
- 1/4 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 unbaked 9-inch deep dish pie pastry
- Topping
- 1/2 cup sugar
- 1/2 cup flour
- 1/4 teaspoon cinnamon

Fruit (Apple/Blueberry) Crisp

Preheat oven to 375, grease pan
- 8 c sliced tart apples (~8 med) OR 8 c blueberries, 2 T lemon juice, 2/3 c sugar (or more if berries tart)
- 1 1/4 c brown sugar
- 1 c flour
- 1 c oats
- 1/8 t salt?
- 1 1/4 t cinnamon
- 2/3 c butter
Banana Yogurt Bread

Preheat oven to 375 degrees
- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 2 large eggs, slightly beaten
- 1 cup mashed very ripe banana (about 3 medium)
- 1 teaspoon vanilla extract
- 1 1/2 cups flour (white or ww)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup plain yogurt (or vanilla & reduce sugar)
- 1 cup chopped nuts, preferably toasted
