Preheat oven to 325°F. Coat madeleine pan with butter or baking spray
- 2 large eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon grated lemon peel (optional)
- 1/2 t salt (reduce or omit if using salted butter)
- 1 cup all purpose flour
- 1 t baking powder
- 10 tablespoons (1 1/4 sticks) unsalted butter, melted, cooled slightly, plus more for coating pan (or use baking spray)
- 1 T honey
- Powdered sugar

Combine all the ingredients in a large mixing bowl and knead well
- 1-1/2 lb. ground lamb, beef or a combination of the two
- 1 small onion, grated
- 2 garlic cloves, minced
- 1-1/2 tablespoons finely chopped cilantro
- 1-1/2 tablespoons finely chopped parsley
- 2 large pinches dried spearmint or 4 large pinches finely chopped fresh spearmint
- 1 large pinch dried marjoram
- 1 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon. ras el hanout
- 1/2 teaspoon cayenne

- 1 c butter
- 1 1/2 c confectioner's sugar
- 1 egg
- 1 t vanilla
- scant 2 1/4 c flour
- 1 t baking soda
- 1 t cream of tartar
- 1/2 t cinnamon (opt)
Ice Cream Brownie Cake

Place a 12-by-16-inch piece of aluminum foil on a flat working surface
- Double-Chocolate Brownies, baked in 2 8- or 9-inch cake pans
- Cardboard disk with a 9-inch diameter, covered with aluminum foil
- 1 pint peppermint stick, pistachio, butter crunch or black raspberry ice cream, slightly softened
- 1/2 cup seedless raspberry preserves
- 3/4 cup finely chopped walnuts or chocolate cookie crumbs
- 1/3 cup confectioners' sugar

- 300 g Dried Beans
- Bunch of Swiss Chard
- 1 Savoy Cabbage
- 1 Bunch of Tuscan "Black" Cabbage or Kale
- Tomato Purèe
- 2 Days Stale, Tuscan, White Bread
Tofu & Cabbage Salad with Peanut Dressing

Heat oil in a medium skillet over medium heat
- Salad
- 1 tbsp sesame oil
- 1 lb block firm tofu, cut into 1/2-inch strips lengthwise
- 1 medium head green or red cabbage, shredded or chopped (about 2 1/2 cups)
- 3 medium cucumbers, peeled, seeded and cut into bite-sized cubes
- 2/3 cup chopped green onions
- Peanut Dressing
- 1/2 cup plain nonfat yogurt
- 1/4 cup creamy peanut butter
- 1 tbsp fresh lime juice
- 1/2 tsp soy sauce (light or regular)
Pink Grapefruit, Grape, Raspberry, and Olive Oil Salad with Minted Yogurt

Peel and segment the grapefruit over a bowl and reserve any juices that drip from them
- 2 pink grapefruit
- 1 1/2 tablespoons extra-virgin olive oil
- 10 ounces seedless grapes, stems removed
- 1 teaspoon honey
- 2 handfuls of raspberries
- 12 mint leaves, finely shredded
- 1 cup thick plain yogurt (try a sheep- or goat-milk yogurt for extra flavor)
