Strawberry Bread

Preheat oven to 350, prepare pans
- Bread:
- 3 c + 2 T flour
- 1 t baking soda
- 1 t salt
- 2 c sugar
- 4 eggs, well beaten
- 1 1/4 c oil
- 20 oz frozen sliced strawberries, thawed, with 1/2 of syrup set aside (see below).
- 1 c chopped pecans (opt)
- Topping/Spread:
- 1 8-oz cream cheese
- 1/2 c reserved strawberry syrup
Oolong Marinated Black Cod/Sea Bass

1. Make your sauce and marinade by combining the six ingredients in a medium saucepan over medium heat
- MARINADE/SAUCE
- 2 cups oolong tea (steep 1 bag for 5 min)
- 2/3 cup loso soy sauce (less for regular)
- 3/4 cup light brown sugar
- 2 teaspoons minced fresh ginger
- 1 teaspoon minced fresh garlic
- Two 1/2-pound sea bass fillets
- OPTIONAL GARNISH
- 1 tablespoon oil
- 6 handfuls fresh spinach
- 1/2 teaspoon minced fresh garlic drained
Toasted Israeli Couscous Salad with Grilled Summer Vegetables

n a small bowl, whisk together the vinegar, mustard and garlic, slowly add the olive oil and whisk until combined
- 1/2 cup balsamic vinegar
- 1 teaspoon Dijon mustard
- 2 cloves garlic, coarsely chopped
- 1 cup olive oil
- Salt and freshly ground pepper
- 2 green zucchini, quartered lengthwise
- 2 yellow zucchini, quartered lengthwise
- 6 spears asparagus, trimmed
- 12 cherry tomatoes
- 1 red bell pepper, quartered and seeded
- 1 yellow bell pepper, quartered and seeded
- 1/4 cup basil chiffonade (stack leaves, roll in a cigar shape and cut crosswise into thin strips)
- 1/4 cup coarsely chopped flat-leaf parsley
- 2 tablespoons olive oil
- 1 pound Israeli couscous
- 2 cups vegetable stock, heated
- Hot water to cover
Banana Crunch Muffins

Preheat the oven to 350 degrees F
- 3 cups all-purpose flour
- 2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 pound unsalted butter, melted and cooled
- 2 extra-large eggs
- 3/4 cup whole milk
- 2 teaspoons pure vanilla extract
- 1 cup mashed ripe bananas (2 bananas)
- 1 cup medium-diced ripe bananas (1 banana)
- 1 cup small-diced walnuts
- 1 cup granola
- 1 cup sweetened shredded coconut
- Dried banana chips, granola, or shredded coconut, optional
Kofta (meatball) Masala

To make the Koftas: Soak the bread in the milk for a couple of minutes and squeeze out all the milk
- Kofta:
- 2 larges Slic white bread
- 7 fluid ounce Milk
- 450 grams Lean minced lamb; (1 lb)
- 2 Cloves garlic; peeled and coarsely
- ; chopped
- 55 millilitres Water; (2 fl oz)
- 1 Fresh green chilli; coarsely chopped or
- ; de-seeded and
- ; chopped for
- Milder flavour
- 2 tablespoons Chopped coriander leaves
- 1 tablespoon Fresh mint leaves; chopped, or 1 tbsp
- ; dried or bottled
- ; mint
- 1 tablespoon Salt or to taste
- Masala Sauce:
- 5 tablespoons Cooking oil
- 2 mediums Onions; (225 g / 8 oz)
- ; finely chopped
- 2 teaspoons Ginger paste
- 2 teaspoons Garlic paste
- 1 tablespoon Ground coriander
- 1 ½ teaspoon Ground cumin
- ½ teaspoon Ground turmeric
- ¼ teaspoon Chilli powder; up to 1/2, up to
- 1 small Can tomatoes
- 150 millilitres Warm water; (5 fl oz)
- ½ teaspoon Salt or to taste
- 1 Black cardamoms; split open the top
- ; of each pod
- 4 Whole cloves
- 1 2 inch piece cinnamon stick; broken up
- 2 Bay leaves; crumpled
- 2 tablespoons Thick set natural yoghurt
- 2 tablespoons Ground almonds
- 1 tablespoon Chopped coriander leaves
Baked French Toast Casserole with Maple Syrup

Slice French bread into 20 slices, 1-inch each
- Praline Topping:
- 1 loaf French bread (13 to 16 ounces)
- 8 large eggs
- 2 cups half-and-half
- 1 cup milk
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Dash salt
- Praline Topping, recipe follows
- Maple syrup
- 1/2 pound (2 sticks) butter
- 1 cup packed light brown sugar
- 1 cup chopped pecans
- 2 tablespoons light corn syrup
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Sand Castle Cake

Use a long serrated knife to trim the top of the round cake flat, if needed
- 8 -inch round yellow cake
- 9 -inch square yellow cake
- 2 (12-ounce) cans whipped vanilla frosting
- Vanilla wafers, 12-ounce box
- 4 jumbo ice-cream cups
- 2 small ice-cream cups
- 6 sugar cones
- Graham cracker sticks (we used Nabisco Honey Maid Grahams Honey Sticks)

- 4 c rolled oats
- 2 c flour
- 1 1/2 c brown sugar
- 1/2 t salt
- 1 1/2 c butter, cold & diced
- 2 c low-sugar jam (apricot &/or rasp work well, something tart)
