Dips (Hot Broccoli Cheese)

1) Melt butter in a large skillet
- 1/2 cup butter
- 6 stalks celery, sliced
- 2 onions, chopped
- 2 cans (4 ounces each) sliced mushrooms, drained
- 1/4 cup plus 2 Tbsp flour
- 2 cans (10 3/4 ounces each) condensed cream of celery soup
- 5 to 6 ounces garlic cheese, cut into cubes
- 2 packages (10 ounces each) frozen broccoli spears
- French bread slices, bell pepper strips, cherry tomatoes
Breakfast (Frittata with Baby Broccoli & Cheddar)

Preheat an oven to 350°F
- 2/3 cup fresh bread crumbs
- 1/4 cup plus 1 tsp. extra-virgin olive oil
- 1/2 lb. baby broccoli, roughly chopped
- 12 eggs, lightly beaten
- 1 cup grated sharp cheddar cheese
- 3/4 tsp. kosher salt, plus more, to taste
- Freshly ground black pepper, to taste
- 1 fresh rosemary sprig, about 1 inch long
- 1 shallot, thinly sliced
- 1 garlic clove, minced
- 1/8 tsp. red pepper flakes

1)Heat sausage in dutch oven over medium heat until fat renders and sausage is browned,about 8 minutes
- 1/2 Lb andouille sausage,halved lengthwise and sliced into thin half moons
- 1 onion,chopped fine
- 1 green bell pepper,seeded and chopped fine
- 1 celery rib,chopped fine
- 4 garlic cloves,minced
- 1 Tsp dried oregano
- 1/2 Tsp dried thyme
- Salt and pepper
- 5 Cups chicken broth
- 1 Lb dried red kidney beans,rinsed and picked over
- 1 bay leaf
- 1 1/2 Cups long-grain rice
- 2 Cups water
Salads (Caesar with Crunchy Croutons)

Make the croutons: Heat the oven to 350 degrees F
- Croutons:
- 1/2 loaf crusty Italian bread
- 1/4 cup extra-virgin olive oil
- 1/4 cup grated Parmesan
- 2 tablespoons fresh thyme leaves
- Kosher salt and freshly ground black pepper
- Dressing:
- 4 anchovy fillets
- 1 clove garlic, smashed
- 2 lemons, juiced
- 1 tablespoon water
- 1/2 cup extra-virgin olive oil
- 1/2 cup freshly grated Parmesan
- Freshly ground black pepper
- Salt
- 2 heads romaine lettuce
- Freshly grated Parmesan, for garnish

1) In a shallow bowl, combine the egg, milk, sugar and orange peel
- 1 egg
- 1/4 cup 2% milk
- 1 teaspoon sugar
- 1 teaspoon grated orange peel
- 4 slices white bread
- 2 tablespoons finely chopped pecans
- 4 slices process American cheese (2/3 ounce each)
- 2 thin slices deli turkey (1/2 ounce each)
- 2 slices Swiss cheese (3/4 ounce each)
- 2 thin slices deli ham (1/2 ounce each)
- 2 teaspoons butter
- 2 teaspoons confectioners' sugar
- 1/4 cup seedless raspberry jam

1) Coat slow cooker with nonstick cooking spray
- 3 to 4 cups diced crusty bread (3/4 to 1-inch dice)
- 1/2 pound bacon, cut into 1/2-inch dice
- 2 cups sliced mushrooms
- 2 cups torn fresh spinach
- 8 eggs
- 1/2 cup milk
- 3/4 cup roasted red peppers, drained and chopped
- 1 cup shredded cheese, such as Cheddar or Montery Jack
- Salt and black pepper, to taste

- Kosher salt
- 2 pounds red-skinned potatoes, cut into 1/2-inch pieces
- 5 tablespoons extra-virgin olive oil
- 1 tablespoon unsalted butter
- 1 cup diced red onion
- 1/2 cup diced Anaheim chile pepper
- 1/2 cup diced red bell pepper
- 8 ounces corned beef, diced
- 3 tablespoons minced garlic
- 1 teaspoon paprika
- Freshly ground pepper
- Shredded cheddar cheese, sliced avocado, sour cream and sliced scallions, for topping

- 1 Cup fresh spinach leaves
- 1/2 Cup plain yogurt
- 1/2 Cup feta,crumbled
- 1/2 Cup fresh parsley leaves
- 3 Tbsp fresh oregano leaves
- 2 Tbsp fresh mint leaves
- 2 Tbsp fresh lemon juice
- 1 Tsp honey
- Salt and pepper to taste
- 1/4 Cup olive oil
- For The Pasta:
- 2 1/2 Cups dry penne pasta
- 1 Cup roasted red bell pepper,cut into strips
