Easy Apple Galette

In a small bowl mix the flour, salt and sugar together
- Crust:
- 2/3 cups Flour
- pinch of Salt
- 1 tablespoon Sugar
- 1/4 cup Unsalted Butter, cut into small bits
- 3-4 tablespoons Cold Water
- Apple Filling:
- 2-3 apples, peeled and cut into 1/4" slices
- 4 tablespoons Brown Sugar
- 3 tablespoons Cornstarch
- 2 teaspoons Fresh Lemon Juice
- 1 teaspoon Cinnamon
- 1/2 teaspoon Fresh Grated Nutmeg
- Pinch of Salt
- 1 tablespoon Butter
- Raw sugar for sprinkling on top
Tea Time Tassies

I started making these in the early 80's
- Crust:
- 3 oz Cream Cheese, softened
- 1/2 cup Butter, softened
- 1 cup Flour
- Filling:
- 1 tbsp Butter, softened
- 3/4 cup Brown Sugar
- 1 Egg
- 1 tsp Vanilla
- 2/3 cup Nuts, chopped
- 6 Maraschino Cherries, if desired
Make-Ahead Breakfast Casserole

Cook sausage until cooked throughout
- 1 pound Sausage, or meat of choice
- 6 cups Bread, cubed; I use unsliced french bread
- 3 cups grated Cheese of your choice; save 1 cup to sprinkle on top
- 8 Eggs
- 2 cups Milk, more if needed
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 tsp Dry Mustard
- 1/2 tsp Worcestershire Sauce
- Optional: 1/2 cup Green Onions, chopped
Dream Salad

The grandkids always looked forward to their favorite jello salad at Grandma's family dinners
- Jello:
- 2 pkg Orange Jello
- 2 cups Boiling Water
- 1 6oz can Frozen Orange Juice
- 1 #2 can Crushed Pineapple
- 1 can Mandarin Oranges
- Topping:
- 1 pkg Instant Vanilla Pudding
- 1 cup Milk
- 1 cup Whipping Cream or Whip Topping
Classic Vichyssoise

Soup
- 3 Leeks, white part of stalk only
- 1 tbsp Butter
- 1 Onion, thinly sliced
- 5 Potatoes, medium/large, peeled and thinly sliced
- 1/4 tsp Thyme
- 1/2 tsp Marjoram
- 1 Bay Leaf
- 5 cups Chicken Stock, heated
- 1/4 cup Heavy Cream
- Salt and Pepper
Cup o' Brownie

In the bowl of a mixer, blend the butter and sugar until pale and creamy
- 5 ounces Unsalted Butter, softened
- 1 cup Sugar
- 1-2 tsp Vanilla, I used 2 tsp
- 3/4 cup Cocoa Powder
- 1/4 to 1 tsp Cinnamon, I used 1/4 tsp
- 2 Eggs, room temperature, lightly mixed with a fork
- 1 cup Flour
- 1 tsp Baking Powder
- a dash of Salt

Whisk flour, salt, and baking soda in a bowl; set aside
- 2 cups Flour
- 1 scant tbsp Kosher Salt
- 1-1/4 tsp Baking Soda
- 1-1/2 cups Light Brown Sugar, packed
- 1-1/4 cups Sugar
- 16 tbsp Unsalted Butter, softened
- 2 Eggs
- 1 tbsp Vanilla
- 12 oz Bittersweet Chocolate, finely shaved
- 8 oz Hazelnuts, finely ground
Easy Pasta e Figioli

In a large pot or dutch oven, add the oil and diced onion and cook over medium heat for about 3-4 minutes
- 1 tbsp Oil
- 1 medium Onion, diced
- 3 stalks Celery, diced
- 3 medium Carrots, diced
- 1 lb Ground Round
- 1 28 oz can Diced Tomatoes, undrained
- 1 can White Beans - Cannellini, Great Northern or Navy, rinsed and drained
- 1 can Small Red Beans - Pinto are fine, rinsed and drained
- 2 cups Broth - Chicken or Beef
- 4 cups V-8 Vegetable Juice, plus more if needed
- Italian Seasoning to taste - Basil, Oregano, Fennel, Parsley
- 1 tsp Pepper
- 1 jar Trader Joe's Roasted Garlic Spaghetti Sauce
- 1 cup Dry Pasta, Ditalini or Shell
Cheesecake for Cheesecake Pops
