- Topping:
- 3 cups Flour
- 1 stick Unsalted Butter, cold and cut into small pieces
- 3/4 cup Half and Half
- 1/3 cup Sugar
- 1/2 tsp Salt
- 1 tbsp Baking Powder
- 1 cup Milk
- 1 Egg
- 2 tsp Vanilla
- 1 cup Butterscotch Chips
- 1/3 cup Butterscotch Chips, chopped
- 1 Egg White
Chicken in Mushroom Gravy

I got this recipe from a very nice lady, Leona Irvine
- 1/4 cup Flour
- 1 tsp Salt
- Paprika
- Pepper
- 2-3 lbs Chicken - breasts, thighs, or whole cut chicken
- Oil for browning
- 1 can Cream of Mushroom Soup
- 1 small Onion, chopped
- 1 Green Pepper, chopped
- 1 cup approx. Frozen Peas
Spicy Chicken Chili

Heat the olive oil in a soup pot over medium heat
- 2 tbsp Olive Oil
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 1-1/2 tsp Cumin
- 1 tbsp Mexican Oregano, or to taste
- 1/2 tsp Cayenne Pepper, or to taste
- 2 cups La Victoria Salsa Verde, Thick n Chunky
- 3 cans White Beans; Great Northern, White Kidney or Cannellini Beans
- 1 Box Chicken Broth, or about 3-1/2 cups
- 2-3 cups Chicken of your choice
- Monterey Jack Cheese, grated for top of chili
- Salt and Pepper to taste
Almond-Raspberry Cake

Heat oven to 350 degrees. Grease and flour a 9-inch round baking pan
- 4 tbsp Unsalted Butter, at room temperature
- 1/4 cup Sugar
- 1 7-oz tube or can Almond Paste, broken into pieces
- 3 large Eggs, at room temperature
- 1 tsp Vanilla
- 3/4 cup Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1 6-oz box Fresh Raspberries
- 1/4 cup Slivered Almonds
Make-Ahead Turkey Gravy

1. Heat oven to 400°F. Put wings in a single layer in roasting pan; scatter onions on top
- 4 turkey wings (about 3 to 4 lb)
- 2 medium onions, peeled and quartered
- 1 cup water
- 8 cups chicken broth
- 3 carrots cut in chunks
- 3 stalks celery with leaves, cut in chunks
- 1/2 tsp dried thyme or a few sprigs of fresh
- 3/4 cup all purpose flour
- 2 Tbsp butter
- 1/2 tsp freshly ground pepper
Lemon Butter Sauce

Combine the sugar, cornstarch and salt in a small saucepan, mixing well
- 1/2 cup Sugar
- 1 tbsp Cornstarch
- 1/8 tsp Salt
- 1 cup Boiling Water
- 2 tbsp Butter
- 1 tsp Fresh Lemon Rind, grated
- 3 tbsp Fresh Lemon Juice
Spicy Chicken and Rice

In a large saucepan, cook onion, pepper and garlic in oil until tender
- 2 to 2-1/2 lbs precooked Chicken Breasts
- 1/2 cup Onion, chopped
- 1/2 cup Red Pepper, chopped
- 3 cloves Garlic, minced
- 1 tbsp Olive Oil
- 1 14-1/2 oz Tomatoes, chopped
- 1 15 oz can Red Kidney Beans, rinsed and drained
- 1 cup V8 Juice, or tomato juice
- 1 cup Frozen Corn, Trader Joe's Fire Roasted
- 2/3 cups Long Grain Rice
- 2 tsp Chili Powder, or to taste
- 1/4 tsp Cayenne Pepper
- 1/2 tsp Salt
- Grated cheese, optional
- Note: If you use uncooked chicken breasts on top, you can reduce the liquid to 2/3 cups.
