Peach jam with cinnamon and a wee touch of ginger
- 4 cups Peaches - about 3 large Peaches
- 2 tablespoons Fresh Lemon Juice
- 2 tablespoons Water
- 3 cups Sugar
- 1/8 teaspoon Ginger
- 1/2 teaspoon Cinnamon
Chocolate Caramel Fudge Cake

- Batter:
- 2 cups Cake Flour
- 2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Butter
- 2 cups Sugar
- 3 Large Eggs
- 1-1/2 tsps Vanilla
- 3 oz Unsweetened Chocolate, melted and cooled
- 1 cup Sour Cream
- 1 cup Boiling Water
- Filling:
- 1/2 cup Butter
- 1 12oz Package Caramels, unwrapped
- 1 can Sweetened Condensed Milk
Chicken Stew

Heat the oil in a deep pan over medium heat
- 2 tbsp Olive Oil
- 1 Carrot, peeled and chopped
- 1 Onion, chopped
- 2 (14oz) can Diced Tomatoes
- 16 oz Chicken Broth, homemade preferred
- 1 cup Fresh Basil Leaves, torn into pieces
- 2 tbsp Tomato Paste
- 2 Bay Leaves
- 2 Chicken Breasts with ribs, (about 1-1/2 lbs)
- 2 (15oz) cans White Kidney Beans, rinsed and drained
- Salt and pepper, to taste
Double Chocolate Mousse Cake

- Cake:
- 16 oz Semi-Sweet Chocolate
- 4 cubes Butter
- 1 cup Sugar
- 1 cup Half-and-Half
- 1/2 tsp Salt
- 1 tbsp Vanilla
- 8 Eggs
- Ganache:
- 1 cup Chocolate
- 2 tbsp Butter
- 2 tbsp Milk
- 2 tbsp Cornstarch
Super Good Scones

- 2-1/2 cups Flour
- 1/2 cup Cocoa Powder
- 1 tbsp Baking Powder
- 1/2 tsp Salt
- 1/3-1/2 cup Brown Sugar
- 2 tbsp Butter
- 3 tbsp Peanut Butter
- 1 tbsp Vanilla
- 1/2 cup Chocolate Chips
- 1/2 cup Peanut Butter Chips
- 2/3 cup Milk, Regular or Chocolate
Frozen Fruit Salad

In a saucepan, combine sugar and water
- Liquid:
- 2 cups Water
- 1 cup Sugar
- 1 12 ounce can frozen Orange juice concentrate
- Fruit:
- 2 cans Mandarin oranges, drained
- 1 large can crushed Pineapple with juice
- 6 diced bananas
- 2-3 cups fresh berries
- 7 up approx. half of a liter or to taste

- 2 cups Brown Sugar
- 1 cup Shortening
- 2 Eggs
- 2 cups Flour
- 1 tsp Baking Soda
- 1 tsp Vanilla
- 1 cup Potato Chips, crushed
- 1 cup Nuts, chopped
Ginger Scones

These are very good ginger scones if you like crystallized ginger
- 3 cups Flour
- 1/2 cup Sugar
- 5 tsp Baking Powder
- 2 sticks Unsalted Butter, cut into small pieces
- 1/2 cup Crystallized Ginger
- 1 tbsp Ginger Powder
- 1 Egg
- 1/2 cup Milk

- 1/2 cup Butter
- 1 cup Sugar
- 2 Eggs
- 4 cups Apples, diced
- 1 cup Chopped Nuts
- 1 tsp Vanilla

- 2 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/4 tsp Allspice

- 2 Eggs
- 1 cup Corn Oil
- 1 tsp Vanilla
- 1-1/2 cups Sugar
- 1 tsp Soda
- 1 tsp Salt
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 4 cups Apples, peeled and chopped
- 1 cup Pecans
- 2 cups Flour
- 1 cup Powdered Sugar, sifted
- 2 tbsp Milk
- 1-1/2 tbsp Rum or Almond extract
- 1 tsp Vanilla
