Beef Burgundy Stew

- 2 pounds lean beef, cut into 1-inch cubes
- 2 onions, thinly sliced
- 2 cloves garlic
- 3 carrots, thinly sliced
- 20 peppercorns
- 1 bay leaf
- 4 sprigs parsley, finely minced
- 3 cups burgundy wine - cabernet sauvignon
- 2 tablespoons all-purpose flour
- 1 tablespoon unsweetened cocoa powder
- 2 tablespoons tomato paste
- 2 tomatoes, peeled and chopped
- 2 strips bacon
- 1/2 cup frozen or canned pearl onions
- 1 cup sliced mushrooms
