Sizzled Green Beans with Crispy Prosciutto & Pine Nuts

Bring a large pot of water to a boil
- 2 pounds green beans, trimmed
- 2 1/2 teaspoons extra-virgin olive oil, divided
- 2 ounces prosciutto, thinly sliced, cut into ribbons
- 4 cloves garlic, minced
- 2 teaspoons minced fresh sage
- 1/4 teaspoon salt, divided
- Freshly ground pepper, to taste
- 1/4 cup toasted pine nuts
- 1 1/2 teaspoons freshly grated lemon zest
- 1 teaspoon lemon juice
Grilled or Roasted Tofu Satay

Combine the marinade ingredients in a large bowl
- The marinade:
- 2 tablespoons tamari soy sauce
- 2 tablespoons Asian sesame oil
- 2 tablespoons sherry
- 2 pounds extra-firm tofu, sliced 1 inch thick and patted very dry, then cut into 1-inch cubes and patted again
- 1 red bell pepper, cut into 1-inch squares
- The sauce:
- 3/4 cup canned coconut milk (see Tip)
- 1/2 cup natural-style peanut butter, smooth or chunky
- 2 garlic cloves, minced
- 1 1/2 teaspoons curry powder
- 1 1/2 tablespoons brown sugar
- 1 tablespoon lime juice
- 1 tablespoon canola oil
- 1 1/2 tablespoons tamari soy sauce
- Dash cayenne pepper

- 1 ″ length of ginger julienned

- 1 clove of garlic smashed
- 1 cup water
- 1/4 cup red or white miso
- 2 pounds mackerel cut into large pieces
- 1/2 sweet onion sliced thin on a mandoline
- 2 stalks celery sliced thin
- 1 tablespoon rice vinegar
- 1 teaspoon Japanese hot mustard (karashi)
- 1 teaspoon sugar
- 1/2 teaspoon kosher salt (halve if using regular salt)

- Ingredients
- 3 Tbsp. vegetable oil
- 8 cloves garlic, chopped
- 4 carrots, peeled and cut into 1/4 cubes (about 1 1/2 cups)
- 3 small fresh chilis, such as bird's-eye, seeded and finely chopped
- 1/2 cup packed light brown sugar
- 2 Tbsp. finely chopped ginger (from about one 2" piece)
- 2 Tbsp. ground turmeric
- 2 Tbsp. mild chili powder
- 1 Tbsp. yellow mustard seeds (optional)
- 2 cups chicken broth
- 1/2 cup white wine vinegar
- 2 tsp. cumin seeds
- 2 mangoes, peeled, pitted, and cut into 1/2 cubes (about 4 cups)
- 1/2 cup dried cranberries
- 1/2 cup pitted prunes, chopped
- 1/4 cup lime juice (from about 2 limes)
- 1 Tbsp. honey
- 1 1/2 tsp. kosher salt
- 2 tsp. finely chopped chives (optional)
