Heat oven to broil. Coat peppers with a little bit of oil and roast until skins are blistered
- 2 tablespoons extra-virgin olive oil
- 8 large orange peppers, split in half, top and seeds removed
- 1 large sweet yellow onion
- 1 clove garlic, minced
- 1 cup leeks, sliced thin, white parts only
- 4 cups vegetable broth
- 1 cup fresh orange juice
- Salt and pepper to taste
- 1 bunch kale leaves, thick stem removed, washed and dried
- Olive oil spray
- Kosher salt
Butternut Squash Farro Risotto

1. Heat the oven to 400°F
- 2 1/2 cups butternut squash, cut into 1/2-inch cubes
- 3 tbsp. olive oil
- 1 tbsp. plus 1 tsp. sage, chopped
