Chili-Roasted Carrots

Position rack in lower third of oven; preheat to 450ºF
- 2 tablespoons canola oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 2 pounds carrots (10-12 medium), cut into 1/4-inch diagonal slices
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons lime juice

* Put all ingredients into a blender * Blend on high until frothy and all ice is crushed * Pour into 1
- o 1 cup brewed Teeccino, chilled - follow instructions for making Iced Teeccino
- o 2 oz chocolate syrup
- o 1 tbsp maple syrup, agave syrup, or your preferred non-caloric sweetener like Xylitol, Stevia, or Erythritol
- o 6 oz cold milk or non-dairy milk
- o 1 cup ice cubes

- 1 1/2 cups sugar
- 3/4 cup apple cider or apple juice
- 1/3 cup apple cider vinegar
- 1 12-ounce bag fresh cranberries (about 3 cups)
- 1 large Bosc pear, peeled, halved, cored, cut into 1/2-inch cubes
- 1/4 cup finely chopped peeled fresh ginger
- 1/4 teaspoon dried crushed red pepper

1. Melt the dark chocolate in the top of a double boiler
- 8 oz. chopped dark chocolate
- 2 c. whole milk
- 3 T. choped almonds, plus extra for texture

- 1 3/4 cups all-purpose flour

- 1/4 teaspoon salt
- 1 1/4 cups granulated sugar
