Pumpkin Cheesecake Crumble Squares

For crust: Preheat oven to 350°F
- Crust:
- 1 C. all purpose flour
- 3/4 C. golden brown sugar – packed
- 1/2 t. salt
- 1 stick chilled unsalted butter – diced
- 1 C. pecan halves
- 3/4 C. old-fashioned oats (I used quick cooking because I was out of old fashioned)
- Filling:
- 1 (8-ounce) package cream cheese – room temperature
- 3/4 C. fresh or canned pumpkin puree
- 1/2 C. sugar
- 1 large egg
- 1 1/2 t. ground cinnamon
- 1 t. ground ginger
- Topping:
- 1 C. sour cream
- 2 T. sugar
- 1/4 t. vanilla extract
Caramel Banana Shortcakes

Line a baking sheet with parchment paper and preheat oven to 425
- filling:
- 2 and 1/3 c. buttermilk baking mix
- 1/4 tsp. cinnamon
- 1/4 c. milk (plus more is needed)
- 1/2 c. mashed banana
- 1 TBSP melted butter
- 16 ounces caramel sauce/topping
- 2-3 medium bananas, sliced
- brown sugar whipped cream:
- 1 c. heavy whipping cream
- 1/2 c. packed light brown sugar
Maple Pumpkin Granola

Preheat oven to 300 degrees
- 1/3 cup pumpkin puree
- 1/3 cup packed brown sugar
- 1/4 cup pure maple syrup
- 2 tablespoons unsalted butter, melted
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 1/4 cups old fashioned oats
- 1 cup Grape Nuts
- 1/3 cup finely chopped pecans
- 1/2 cup raisins
- 1/3 cup finely chopped dried apples
- 1/3 cup finely chopped dried figs, dates, or plums

1. Preheat oven to 350 degrees
- 8 Tbsp butter
- 8 oz bittersweet chocolate, chopped
- 1 cup + 2 Tbsp sugar
- 4 large eggs
- 1 cup + 2 Tbsp flour
- 1/4 cup cocoa powder (Special Dark and dutch-process make a darker brownie but unsweetened/natural works fine)
- 1/2 tsp baking powder
- 1/2 tsp salt
- 4 oz reduced-fat cream cheese, at room temp
- 1/2 cup canned pumpkin
- 1 tsp vanilla
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/8 tsp ground cloves
- 1/8 tsp ground all spice
- 1/4 tsp ground ginger
Whole Wheat Pizza Dough

Combine flours, yeast, salt, and sugar in a food processor; pulse to mix
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 2 1/4 teaspoons instant yeast
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 3/4 cup warm water
- 1 tablespoon olive oil
Cinnamon Chocolate Churro Cupcakes

Preheat oven to 350 degrees F
- Cinnamon Cupcakes:
- 1 1/4 cup all-purpose flour
- 2 tablespoons cornstarch
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup almond milk
- 1 teaspoon cider vinegar
- 3/4 cup granulated sugar
- 1/3 cup oil
- 1 teaspoon vanilla extract
- Mexican Chocolate Pudding Filling:
- 2 tablespoons cornstarch
- 1/4 cup sugar
- 1/8 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 1/2 cups whole milk
- 3 ounces good quality semisweet or dark chocolate, coarsely chopped
- 1/2 teaspoon pure vanilla extract
- Chocolate Whipped Cream Frosting:
- 1/2 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons whole milk
- 1 teaspoon meringue powder
- Pinch of cream of tartar
- Pinch of cinnamon
