Peanut Butter Chocolate Cheesecake Bites

Preheat oven to 375°F. Spray 12-cup mini muffin tin with non-stick spray
- For the crust:
- 1 cup of graham cracker crumbs (7-9 graham crackers pulsed to crumbs in food processor)
- 1/2 teaspoon cinnamon (optional)
- 2 Tablespoons sugar
- 3 Tablespoons unsalted butter, melted
- For the filling:
- 6 ounces cream cheese, softened
- 1/4 cup creamy peanut butter
- 1 large egg
- For chocolate topping:
- 1/2 cup semisweet chocolate chips, such as Ghirardelli 60% chocolate chips
- 2 1/2 tablespoons heavy cream
Smoked Gouda Chorizo Jalapeno Poppers

Special Equipment: parchment paper Preheat oven to 375 degrees F
- 2 * 2 links Mexican chorizo, casings removed
- 1/2 * 1/2 pound smoked gouda, shredded
- 1/4 * 1/4 cup finely chopped red onions
- 1 * 1 egg
- 1/2 * 1/2 cup cream cheese
- 3 * 3 tablespoons sour cream
- 1 * 1 tablespoon hot sauce (recommended: Frank's Red Hot)
- * Salt and freshly ground black pepper
- 12 * 12 large jalapeno peppers, stemmed, seeded and halved

- Filling Ingredients:
- 1 cup pumpkin
- 2/3 cup packed brown sugar
- 1 cup milk
- 1/2 cup vegetable oil
- 2 eggs
- 3 cups all-purpose flour
- 1/2 cup sugar
- 5 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1/2 teaspoon cloves
- 1/2 cup chopped walnuts, or 1/2 cup raisins
- 1 8-oz. package of cream cheese
- 1/2 cup sugar
- 2 tablespoons unbleached flour
- 1 egg
- 1/4 cup sour cream
- 1 teaspoon vanilla
Dessert Risotto with Wine Poached Figs

In a medium sauce pan, add wine, sugar, vanilla bean, cinnamon stick, cloves, and orange peel, and bring to a boil
- Poached Figs:
- 2 cups Muscata wine (or other sweet dessert wine of your choice)
- ¾ cup granulated sugar
- 1 vanilla bean split down the middle
- 1 cinnamon stick
- 4 whole cloves
- 1 whole orange peel from a fresh orange
- 8 fresh Brown Turkish Turkey or Black Mission figs, quartered
- Risotto:
- 1/2 cup Arborio rice
- 2 cups water
- 2 cups whole milk
- 1/3 cup granulated sugar
- 2 tablespoons chopped toasted pistachios, for garnish
- Orange zest curls, for garnish
Cranberry Chai Cupcakes with Chai Cream Cheese Frosting

Preheat oven to 350 degrees F
- For the chai spice seasoning:
- 1 tsp ground fennel
- 3/4 tsp ground cloves
- 2 tsp ground cardamom
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp freshly-ground black pepper
- For the cupcakes:
- 1/2 cups (1 stick) unsalted butter, at room temperature
- 1 1/4 cups granulated sugar
- 2 cups all-purpose flour
- 1 Tbsp chai spice seasoning
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 2 eggs
- 1 1/4 cups buttermilk
- 3/4 cups chopped fresh cranberries
- For the frosting:
- 1 (8 oz.) block cream cheese, at room temperature
- 4 Tbsp butter, at room temperature
- 1 1/2 tsp vanilla extract
- 1 1/2 tsp chai spice seasoning
- 4 cups confectioners’ sugar
Pumpkin Polenta

Lightly grease a large, rimmed baking sheet
- 1 3/4 cups yellow cornmeal
- 5 cups low-sodium chicken broth
- 3 tablespoons unsalted butter
- 1 (15 oz.) can pure pumpkin puree
- 3/4 cup freshly grated Parmesan cheese
- 2 tablespoons fresh thyme, finely chopped
- Salt and pepper
- 2 tablespoons olive oil
- 2 or 3 scallion greens, cut into 1/4-inch pieces
Chocolate Pecan Caramel Turtles

- Roasted Pecans
- 5 cups or 1 pound organic pecan halves
- 4 TBS organic unsalted butter - Organic Valley or Pastureland
- Salt - use a good salt. I used around a heaping teaspoon or half tablespoon of Real Salt

- truffle filling:
- 16 oz. semi-sweet or bittersweet chocolate chips
- 1 cup heavy cream
- 4 Tbs. butter
- 1 oz. honey
- 2 tsp. ground cinnamon
- 1 tsp. ground cayenne pepper *
- 1/4 tsp. almond extract
- 1/2 tsp. vanilla extract
- coating chocolate:
- 1 cup semi-sweet or bittersweet chocolate chips
- 2 tsp. vegetable shortening
- ground cayenne pepper
- ground cinnamon

- 1 1/4 cups granulated sugar, divided use
- 2 1/4 cups heavy cream, divided use
- 1/4 cup unsalted butter
- 1/2 - to 3/4 teaspoon flaky sea salt (depending on how salty your sea salt is)
- 1 teaspoon vanilla extract
- 3 large eggs
