Pumpkin Brownies

Preheat oven to 350 degrees F
- 1 15-ounce can of pumpkin
- 1 1/4 cups vegetable oil
- 4 eggs
- 1 cup brown sugar
- 1 cup granulated white sugar
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 1 container whipped topping or cream cheese frosting (optional)
Peppermint Mocha Cupcakes

To make the cupcakes, preheat the oven to 350°F
- CUPCAKES:
- 2 2/3 cups all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 2 to 3 teaspoons espresso powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup whole milk
- 1 cup strong brewed coffee
- 1 teaspoon peppermint extract
- 1 cup (2-sticks) unsalted butter, room temperature
- 1 cup granulated sugar
- 1 cup light brown sugar
- 2 large eggs
- FROSTING:
- 6 large egg whites
- 1 3/4 plus 2 tablespoons granulated sugar
- 1 1/2 cups (3-sticks) unsalted butter, at room temperature
- 4 teaspoons peppermint extract
- 1 to 2 teaspoons vanilla extract
Tropical Bread Pudding

Butter a shallow 2-quart casserole dish
- 5 large eggs
- 1 quart milk, skim, 1%, 2% or whole
- 3/4 cup dried pineapple, finely diced
- 1/2 cup unsweetened shredded coconut, plus 1/4 cup for topping
- 2 teaspoons vanilla
- 2 tablespoons rum (optional but very good)
- 3/4 to 1 cup sugar (use the larger amount if you like a sweeter pudding)
- 1/4 teaspoon salt
- 1 loaf white bread, cut into 3/4-inch cubes, about 6 to 8 cups

- # 1 small jalapeno pepper, seeded and chopped finely
- # 1 tablespoon fresh lime juice
- # 3 cups grated fresh mozzarella cheese
