Marshmallow Crunch Brownies

To prepare the brownies Preheat the oven to 350 degrees
- For the brownie layer
- 4 ounces unsweetened chocolate
- 11 tablespoons (about 2/3 cup) unsalted butter
- 7.5 ounces (about 1 1/4 cups) chopped bittersweet chocolate, divided
- 1/2 teaspoon instant espresso powder
- 1 1/3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 large eggs
- 2 cups granulated sugar
- 2 teaspoons vanilla
- For the topping
- 10.5 ounces miniature marshmallows
- 9 ounces (about 1 1/2 cups) chopped milk chocolate
- 1 cup smooth peanut butter
- 1 tablespoon unsalted butter
- 1 1/2 cups Rice Krispies cereal
Cranberry Apple Harvest Muffins

Preheat the oven to 375° F
- 1 ½ cups all-purpose flour
- 1 ½ tsp. baking powder
- ¼ tsp. baking soda
- ¼ tsp. salt
- 1 ½ tsp. ground cinnamon
- 1 tsp. ground ginger
- ½ cup plus 2 tablespoons milk
- 1 large egg
- 8 tbsp. unsalted butter, melted and cooled
- ¾ cup coarsely chopped fresh cranberries
- ¾ cup peeled and chopped apple
- ½ cup diced Calimyrna figs (or dried figs, or raisins)
- 6 tbsp. packed brown sugar
- 6 tbsp. granulated sugar

To make the dough: Mix and knead together all of the dough ingredients—by hand, mixer or bread machine–till you...
- 1 3/4 cups (7 1/4 ounces) King Arthur Unbleached All-Purpose Flour*
- 1 1/4 cups (7 1/4 ounces) semolina*
- 2 tablespoons (1/2 ounce) King Arthur Easy-Roll Dough Improver (optional, but helpful)
- 1 tablespoon + 1 teaspoon (1/4 ounce) Pizza Dough Flavor (optional, but delicious)
- 1 teaspoon instant yeast
- 1 1/4 teaspoons salt
- 2 tablespoons (7/8 ounce) olive oil
- 1 1/4 cups (10 ounces) cool water
- If you don't want to use semolina, use a total of 3 cups all-purpose flour, and reduce the water to 1 cup + 2 tablespoons.
- Topping
- 4 large eggs
- 2 cups (8 ounces) shredded cheddar, Swiss, or Monterey Jack cheese
- 8 slices (8 ounces) bacon, or 8 ounces breakfast meat of your choice
Caramel Apple Bars

Preheat the oven to 350°F
- Crust
- 1 cup (2 sticks, 8 ounces) unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 3/4 cup (5 5/8 ounces) brown sugar, firmly packed
- 1 cup (4 ounces) confectioners' sugar or glazing sugar
- 2 teaspoons vanilla extract
- 2 3/4 cups (11 1/2 ounces) King Arthur Unbleached All-Purpose Flour
- 1 cup (3 1/4 ounces) nut flour*
- 1 large egg
- Filling
- 4 to 5 medium tart apples, peeled, cored, and sliced, then chopped (about 5 cups, about 20 ounces prepared)
- 2 tablespoons (7/8 ounce) brown sugar
- 2 tablespoons (1 ounce) boiled cider, or substitute an additional 2 tablespoons brown sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Topping**
- 1 cup (10 ounces) caramel, from a block, or about 30 caramel candies
- 2 1/2 tablespoons (1 1/4 ounces) milk or cream
- Almond (toasted or plain), hazelnut flour (toasted or plain), and pecan meal are all good choices. Or grind 1 cup nuts in a food processor; be sure to stop before the mixture becomes pasty.

Raspberry Chicken Salad with Grilled Peaches

Toast the almonds in a nonstick skillet until golden and fragrant, stirring often
- 1/2 cup slivered almonds
- 3 Tbs sugar
- 1 Tbs unsalted butter
- kosher salt
- 1/3 cup red wine vinegar
- 1 1/3 cups fresh raspberries, divided
- 3 Tbs honey, divided
- 3 Tbs minced fresh basil
- 3 Tbs minced fresh mint
- 1 Tbs minced shallots
- 1/4 cup olive oil
- 4 slices French bread, 1-inch thick
- 4 slices brie (4 oz)
- 4 boneless, skinless chicken breast halves (about 6 oz each)
- 2 Tbs olive oil
- 4 peaches, halved and pitted
- 4-6 oz salad greens (I used a mix of spinach and romaine)
Crab Filled Crescent Wontons

- 1-8 oz. tube crescent roll dough
- 3 oz. cream cheese, softened
- 1/4 cup mayonnaise
- 3/4 cup cooked crabmeat, chopped
- 2 green onions, chopped
- 1/8- 1/4 teaspoon cayenne pepper
- salt and pepper, to taste

- 1 sheet frozen puff pastry
- 1 large egg
- 1 teaspoon water
- 1 large pear
- 2 tablespoons butter
- 3 tablespoons firmly packed light brown sugar
- 2 tablespoons dried cranberries
- 1 round (about 8 ounces) Camembert cheese

- Two 8 oz packages cream cheese, at room temperature (use only full fat)
- 2/3 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon pure vanilla extract
- 2 large eggs
- 1/2 cup heavy or whipping cream
- 1 1/2/ tablespoons unsweetened cocoa powder
