Mini Key Lime Pies

Preheat the oven to 350°
- Crust:
- 1 1/3 cup graham cracker crumbs
- 1/3 cup sweetened shredded coconut (preferably the frozen kind, defrosted)
- 2 tablespoons sugar
- 5 tablespoons butter, melted
- Key Lime Filling:
- 4 egg yolks (reserve whites if making the meringue topping)
- 1/4 teaspoon cream of tartar (I didn’t have this so didn’t use, mine came out fine)
- 1 14-ounce can of sweetened condensed milk
- 1 cup key lime juice
- 3 tablespoons key lime zest
- Choose from Rum Cream Topping or Meringue Topping below.

- For the glaze:
- 2 Tbs. fresh lime juice

- 1 envelope active dry yeast
- 2 tablespoons sugar
- 1 1/4 cups warm whole milk
- 8 cups all-purpose flour
- 2 tablespoons kosher salt
- 2 large eggs
- 7 large egg yolks
- 1/4 cup chipotle in adobo puree
- 3 sticks room unsalted butter, cut into pieces and slightly softened, plus more to rub on top of the loaves

- 1 12-oz. can Dr Pepper
- 1 cup ketchup
- 1/2 cup packed brown sugar
- 1/2 cup cider vinegar
- 1/3 cup Worcestershire sauce
- 3 Tbsp. tomato paste
- 2 tsp. ancho chili powder
- 1 tsp. finely ground white pepper
- 1 tsp. kosher salt
- 8 hot dogs (1-lb. pkg.)
- 8 hot dog buns, split and toasted
- Toppers: pickles, sliced jalapeño peppers, chopped onion (optional)
- * I like cheese too!
Whiskey Glazed Ribs

Combine all of the ingredients in a sauce pan, and stir until incorporated
- Rib Spice Rub:
- (yields ~8.5 tablespoons of seasoning, use as needed.)
- 4 tablespoons kosher salt
- 1 tablespoon coarse ground black pepper
- 1 tablespoon dried onion
- 1 1/2 teaspoons dehydrated garlic
- 1 1/2 teaspoons crushed red pepper flakes
- 1 1/2 teaspoons dried thyme
- 1 1/2 teaspoons sweet or spicy paprika
- 1 1/2 teaspoons dried mustard seed.
- Combine all ingredients, and crush with a mortar and pestle, or spice grinder. Season liberally, enough for four to six racks of ribs– adjust the recipe as needed, or save the rest in an airtight container for later.
- Whiskey Glaze:
- (makes ~ 3 cups, enough for 2 large rib racks)
- 1 cup whiskey (I used Canadian Club… cook with your whiskey of choice; Jack Daniel’s works well too)
- 1 cup ketchup
- 1/2 cup dark brown sugar
- 1/4 cup apple cider vinegar
- 1 tablespoon lemon juice
- 2 teaspoons low sodium soy sauce (sub worcestershire sauce if preferred)
- 3 cloves garlic, minced (adjust to taste…heck, I used 5)
- 1 teaspoon yellow mustard
- salt and pepper to taste
