- Chili:

- 1 large yellow onion, finely diced
- 1 1/2 pound boneless, skinless chicken cutlets, cut into 1-inch pieces

- 1 (15 oz) can corn kernels, drained

- juice of half a lime (about 2 teaspoons)
- 1/4 cup light brown sugar
- 4 chipotle chilis in adobo sauce, finely chopped (use fewer chilis for less heat and extra chilis for more heat)**
- 1/4 cup finely chopped fresh cilantro
- 1 avocado, diced and sprinkled with lime juice
- shredded cheddar or Monterey Jack cheese, optional
- low-fat sour cream, optional
- Seasoned Tortillas
- 4 (6-inch) whole wheat tortillas (low-carb or half corn/half wheat are good substitutes)
