1. To make Spring Rolls: Steep tea bags in 3 cups boiling water 5 minutes
- Spring Rolls
- 4 jasmine tea bags
- 3 oz. arborio rice
- 1 Tbs. honey
- 1/2 vanilla bean or 1 1/2 tsp. vanilla extract
- 2 kiwi, finely diced, 4 slices reserved
- 5 strawberries, finely diced, 4 slices reserved
- 4 spring roll wrappers
- Vanilla Dipping Sauce
- 1/3 cup light coconut milk
- 1/4 cup almond milk
- 2 Tbs. sugar
- 1/2 tsp. cornstarch
- 1/4 tsp. grated lime zest
- 1/4 vanilla bean

- 1/2 pound elbow macaroni
- 3 tablespoons margarine

- 1 tablespoon powdered mustard

- 1/2 cup yellow onion, finely diced
- 1 bay leaf
- 1/2 teaspoon paprika
- 1 large egg
- 12 ounces sharp cheddar, shredded
- 1 teaspoon kosher salt

- 1 cup panko bread crumbs

Lamb Chops - ND

Preheat oven to 300 degrees F (150 degrees C)
- 2 lamb chops
- Salt and pepper
- 1 tablespoon olive oil
- 2 shallots, sliced
- 1 clove garlic, minced
- 1/2 cup red wine
- Zest from 1 lime
- 2 teaspoons fresh lime juice (using all the juice from the lime will make the dish too tart)
- Chopped mint for garnish
- Suggested sides: Stir-fried green beans, leafy salad greens, coconut rice.

Directions 1.Heat broth and 2 1/2 cups water in a small saucepan over low heat; keep warm
- 2 cans (14.5 ounces each) reduced-sodium vegetable broth
- 3 tablespoons Earth Balance margarine
- 1 to 2 large zucchini (1 pound), peeled and cut into 1/2-inch cubes
- Coarse salt and ground pepper
- 1/2 cup finely chopped onion
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine
- 1 cup frozen peas, thawed

- 2 tablespoons dry white wine

- 4 teaspoons minced garlic (4 cloves)
- 1/4 cup minced shallots
- 3 tablespoons minced fresh parsley leaves
- 1 teaspoon minced fresh rosemary leaves
- 1 teaspoon grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1 extra-large egg yolk

In the bowl of an electric mixer fitted with the paddle attachment, combine the yeast and warm water
- 2 1/4 teaspoon instant yeast
- 1 cup warm water (105°-115° F)
- 1/4 cup honey
- 3 tablespoons olive oil
- 1 1/2 teaspoon salt
- 1 egg, lightly beaten
- 4 cups bread flour, separated
- olive oil cooking spray
- 1 tablespoon Earth Balance margarine, melted
- 1 tablespoon honey
