Alfredo Sauce with Linguini

1-Melt butter in a Medium saucepan over medium heat
- 1/2 cup of sweet butter
- 2 garlic cloves, minced
- 2 cups of MimicCream
- 1/4 t white pepper
- 1/2 cup of grated parmesan cheese
- 3/4 cup of mozzarella cheese
- 1 box (12 ounce) Luingini or even angle hair pasta

Place chicken breasts in a lightly oiled glass baking dish large enough to hold them in a single layer
- 4 boneless, skinless chicken breast halves
- 3 tablespoons soy sauce
- 1 1/2 tablespoons vinegar
- 3 tablespoons brown sugar
- 1 clove garlic, minced
- 1/4 teaspoon freshly ground black pepper

1 In 13" x 9" x 2" baking dish, stir together lemon juice, soy sauce, minced garlic, salt, ginger, and black pepper
- 1/3 cup fresh lemon juice
- 1/4 cup low sodium soy sauce
- 1 medium garlic cloves, minced
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1/4 tsp black pepper
- 2 lb boneless skinless chicken breasts
- 1 cooking spray

Combine all marinade ingredients in a small bowl
- Marinade:
- 6 thin boneless skinless chicken cutlets (3 oz each)
- 2 tbsp lemon juice
- 2 tbsp toasted sesame seeds
- 2 cloves garlic, minced
- 2 tsp fresh ginger, peeled and minced
- 2 green onions, minced
- 1/4 cup low sodium soy sauce
- 1/4 cup teriyaki sauce
- 1 tsp honey
- 2 tsp sesame oil
Fiesta Rice Salad - Vegan

Cook rice according to package directions
- 2/3 cup uncooked rice
- 2 cups frozen corn, thawed
- 1 can (15 ounces) black beans, rinsed and drained
- 6 green onions, sliced
- 1/4 cup olive oil
- 2 tablespoons cider vinegar
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon molasses
- 1/2 teaspoon salt
- 1/2 teaspoon cumin seeds, toasted and ground
Baked Zucchini With Mozzarella

1. Slice your zucchini up into 1/2 inch rings
- 2 medium sized (or about 5 small) zucchini
- Garlic spread and seasoning
- 2 cups shredded mozzarella cheese I used a bled of Monterrey and cheddar and I didn’t measure the cheese, just put on what looked good)
Baked Spaghetti Squash with Garlic and Butter

Preheat oven to 375 degrees
- 1 small spaghetti squash (about 3-4 lbs)
- 2 Tbsp margarine
- 2 cloves garlic, finely minced
- 1/4 cup finely minced parsley (or basil)

- 1/2 tsp salt (or to taste)
- 1/4 cup shredded cheddar cheese (or Parmesan)
