Pumpkin Cupcakes - Dairy Free

Directions 1.Preheat oven to 350 degrees
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon coarse salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon ground allspice
- 1 cup packed light-brown sugar
- 1 cup granulated sugar
- 1 cup Earth Balance margarine, melted and cooled
- 4 large eggs, lightly beaten
- 1 can (15 ounces) pumpkin puree

1. In a small bowl, dissolve yeast and 1 teaspoon sugar in warm water
- Ingredients
- 4 teaspoons active dry yeast
- 1 teaspoon white sugar
- 1 1/4 cups warm water (110 degrees F/45 degrees C)
- 5 cups all-purpose flour
- 1/2 cup sugar
- 1 1/2 teaspoons salt
- 1 tablespoon olive oil
- 1/2 cup baking soda
- 4 cups hot water
- 1/4 cup kosher salt, for topping
Banana Blueberry Coffee Cake - Dairy Free

Combine first 7 ingredients and beat for 1 minute
- 5 bananas, mashed
- 3/4 cup sugar
- 3/4 cup lt. brown sugar
- 3 eggs
- 4 Tbls Earth Balance margarine
- 1 tsp vanilla
- 1 tsp orange flavoring
- 1 1/3 cups oatmeal (pulverized)
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups blueberries
- Topping
- 1/3 cup lt. brown sugar
- 2 tbls Earth Balance margarine
- 1/2 cup oatmeal
- 3/4 tsp. cinnamon
Baked Potato Soup

1. Preheat oven to 400° 2
- 2 baking potatoes
- 1/3 cups flour
- 3 cups almond milk
- 1/2 cups reduced fat sharp cheddar cheese, shredded, divided
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cups yogurt
- 1/3 cups chopped green onion, divided
Risotto with Crab and Shrimp - Dairy Free

In a saucepan over medium heat, sauté the garlic and 2 Tbs
- 2 large garlic cloves, finely chopped
- 3 Tbs. chopped fresh flat-leaf parsley
- 6 Tbs. olive oil
- 1/2 lb. shrimp, peeled, deveined and each cut into 4 or 5 pieces
- Salt and freshly ground pepper, to taste
- 6 cups chicken or fish broth or water
- 1 yellow onion, finely chopped
- 2 cups medium-grain rice such as arborio, vialone nano or carnaroli
- 1/2 cup dry white wine
- 2 tomatoes, peeled, seeded and chopped (about 1 cup)
- 1/2 lb. fresh-cooked crabmeat, picked over to remove any shell fragments
Baked Salmon Fillets Dijon - Dairy Free

- 4 (4 ounce) filets salmon
- 3 tablespoons prepared Dijon-style mustard
- salt and pepper to taste
- 1/4 cup Italian-style dry bread crumbs
- 1/4 cup Earth Balance margarine, melted

- 3-1/4 cups all-purpose flour
- 1 cup sugar
- 3 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cloves
- 1/2 teaspoon salt
- 3 eggs
- 3 cans (15-1/4 ounces each) sliced pears, drained and mashed
- 1/4 cup unsweetened applesauce
- 1/4 cup olive oil
Spanish Rice

- 2 tb Oil
- 2 tb Onion, Chopped
- 1 1/2 cup Rice
- 2 cup Chicken Broth
- 1 cup Chunky Salsa
