Pat's Blueberry Muffins - Dairy Free

In a large bowl, combine flour, sugar, baking powder and salt
- 2 cups all-purpose flour
- 1/3 cup plus 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup fresh or frozen blueberries, thawed
- 1 egg
- 1 cup almond milk
- 1/4 cup Earth Balance margarine, melted
Swedish Pancakes - Dairy Free

Melt 4 tablespoons butter in a 10-inch nonstick skillet
- 8 tablespoons Earth Balance margarine
- 1 cup all-purpose flour
- 1 3/4 cups almond milk
- 3 large eggs
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Confectioners' sugar, maple syrup and fresh fruit, for garnish
Curried Vegetable Soup - Vegan

1. In Dutch oven combine cauliflower, coconut milk, broth, curry powder, and the 1/4 cup cilantro 2
- MY ADDITIONS:
- 3 cups cauliflower florets (break into small pieces)
- 1 14-oz. can unsweetened coconut milk
- 1 14-oz. can vegetable broth
- 1 Tbsp. curry powder
- 1/4 cup chopped fresh cilantro
- 2 cups frozen baby peas-vegetable blend
- 2 pita bread rounds, cut into wedges (optional)
- 1 Tbsp. olive oil (optional)
- Fresh cilantro sprigs and crushed red pepper (optional)
- 1 tsp salt, to taste
- 1 carrot, shredded
Balsamic Glazed Grilled Chicken Breasts - DF

1. Heat gas or charcoal grill
- Glaze
- 1/3 cup packed brown sugar
- 1/3 cup balsamic vinegar
- 1 teaspoon chopped fresh rosemary leaves
- 1 teaspoon finely chopped garlic
- Chicken
- 4 bone-in skin-on chicken breasts (8 oz each)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Zucchini Bread - Paula Deen's Recipe

Preheat oven to 350 degrees F
- 3 1/4 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon ground nutmeg
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs, beaten
- 1/3 cup water
- 2 cups grated zucchini
- 1 teaspoon lemon juice
- 1 cup chopped walnuts or pecans

Mix the two ingredients, still, and let sit for about 5 minutes or until the milk starts to thicken a bit

German Pancakes - Dairy Free

Heat a skillet (I prefer a non-stick)to medium heat
- Measurements are "approximate". You want the batter to be fairly thin, but not watery.
- 3 cups all-purpose flour
- 3 1/2 cups almond milk
- 2 eggs
- 1 tsp. vanilla
- Earth Balance margarine (for the skillet)
Butternut Bisque - Vegan

- 4 lbs butternut squash
- melted Earth Balance margarine for brushing
- 1 tbls kosher salt
- freshly ground pepper
- 1 qt vegetable broth
- 5 tbls honey
- 2 tsp fresh ginger, minced
- 3/4 cup MimicCream
- 1/2 tsp nutmeg, freshly grated
Lemon Blueberry Muffins - Dairy Free

Preheat oven to 400° F and line a jumbo muffin tin with 6 paper liners
- 1 1/2 cups all-purpose flour
- 3/4 cup vanilla-infused organic sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 1/3 cup organic coconut oil, melted
- 1/3 cup water {or organic almond milk}
- 1 organic large egg
- Zest of an organic lemon
- Juice of half an organic lemon
- 1 cup fresh organic blueberries

- 1 1 1 cup Earth Balance margarine, softened
- 1/2 1/2 1/2 cup sugar
- 1 1/2 1 1/2 1/2 cup packed brown sugar
- 2 2 2 eggs
- 2 2 2 tsp. vanilla extract
- 2 1/2 2 1/2 1/2 cups (12 oz) all-purpose flour *If at all possible, please weigh the flour
- 1 1 1 tsp. baking soda
- 1 1/2 1 1/2 1/2 tsp. baking powder
