Pastry: 1) In a medium bowl stir together flour and salt

- 2 1/4 cups all-purpose flour
- 3/4 teaspoon salt
- 2/3 cup shortening
- 8 to 10 tablespoons cold water
- Filling:
- 6 cups thinly sliced, peeled cooking apples (about 2 1/4 pounds)
- 1 tablespoon lemon juice (optional)
- 3/4 cup sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg

- 3 vegan "beef" bouillon cubes dissolved into 3 cups of water

- 1 medium Onion -- thinly sliced
- 3 cloves Garlic -- minced or pressed
- 1 tablespoon Fresh Ginger Root -- grated
- 1 Cinnamon Stick -- about 2" long
- 1/2 teaspoon Ground Cumin
- 1/2 teaspoon Crushed Red Pepper Flakes
- 1 teaspoon Ground Turmeric
- 1/4 teaspoon Ground Cloves
- 1/4 Ground Cardamom
- 3 1/2 pounds Chicken -- cut up
- 1/2 cup Chicken Broth
- 2 tablespoons Cornstarch -- blended with
- 2 tablespoons Cold Water
- Salt
- 1/4 cup Cilantro Leaves -- lightly packed
- 1/2 cup Green Onions -- sliced

1.Heat olive oil in stockpot on MEDIUM
- 1 Tbsp Olive Oil
- 1 pkg (8 oz) Chopped Onions
- 1 cup (4 oz) thinly sliced Leeks
- 1 cup (4 oz) thinly sliced celery
- 1 Tbsp chopped Garlic
- 2 bay leaves
- Salt and pepper to taste
- 3 Tbsp Flour
- 2 lbs Broccoli Florets
- 2 cartons (32 oz each) Chicken Stock
- 1 container (6 oz) Plain Greek Yogurt

Mashed Potato Cakes with Onions and Kale-Vegan

Bring water to a boil in a Dutch oven; add kale
- 12 cups water
- 1 bunch kale, trimmed (about 4 ounces)
- 2 2/3 cups (1-inch) cubed Yukon gold or red potato (about 1 pound)
- 3/4 teaspoon salt, divided
- 1 tablespoon olive oil
- 1 tablespoon Earth Balance margarine
- 3 cups diced onion
- 2 tablespoons chopped fresh sage
- 1/4 cup sliced green onions
- 1/4 teaspoon freshly ground black pepper
- Cooking spray
- Sage sprigs (optional)
White Country Gravy

Melt the butter and mix in flour, salt and pepper
- 4 tbls flour
- Salt
- Pepper
- 4 tbls butter
- 2 1/2 cups milk
Berry Puff Turnovers from King Arthur Flour

1) To make the crust: Whisk together the flour, salt, and baking powder
- Dough:
- 1 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup cold butter
- 1/2 cup yogurt
- Filling:
- 3 tablespoons Instant ClearJel® or cornstarch
- 2/3 cup honey*
- 3 cups raspberries, fresh or frozen
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon**
- NOTE:
- 1 large egg beaten with 1 tablespoon water, to seal pastries (optional)
- If you use cornstarch, you'll want to dissolve it in cold water, rather than stir it into the honey.
