Raisin bread

This is a bread machine recipe
- 2 1/4 cup milk
- 1 egg
- 6 cups flour
- 5 tblsp sugar
- 1 tblsp honey
- 2 tblsp dry milk
- 3 tsp salt
- 3 tblsp yeast

- Add 1 tsp cinnamon and 1/2 cup raisins
French Onion Soup

- 4 cups sliced onions
- 1 tsp sugar
- 4 tblsp butter, and or rendered chicken fat
- 1 tblsp olive oil
- 2 tblsp flour
- 1 tsp dry mustard
- A couple grates fresh nutmeg
- 2 cloves garlic
- 1/4 cup warmed cognac
- 1 tblsp worchestershire
- 1 can Campbell's beef broth
- 1 can Campbell's chicken broth
- 1 can Campbell's beef consume
- 1/2 cup dry vermouth or white wine
- Sliced baguette
- 1 cup gruyere cheese, grated

To make the brine: In a saucepan combine the apple juice, the salt and the brown sugar and bring to a boil
- 1 cup browm sugar
- 4 cups apple juice
- 1/4 cup salt
- 2 cinamon sticks
- 1 tsp. fennel seeds
- 1 tsp. whole allspice
- 1 tsp. black peppercorns
- 1 bay leaf
- 1 tsp. red pepper flakes
- 1/2 tsp. thyme
- 1 large salmon
