Strawberry and Cream Cheese Crepes

Batter: beat eggs, milk, and water
- CREPE BATTER:
- 2 eggs
- 1/4 c. milk
- 2 tbsp. water
- 4 tbsp. flour
- 1/8 tsp. salt
- FILLING:
- 3 oz. cream cheese, softened
- 6 tbsp. cottage cheese
- 1/4 c. sugar
- SAUCE:
- 2 c. fresh or frozen strawberries, thawed
- 1 tbsp. lemon juice
- 1/3 c. sugar
Pumpkin Dessert

Mix crust together and pat into 9x13 pan
- CRUST:
- 1 box yellow cake mix (reserve 1 cup separate)
- 1 stick melted oleo
- 1 egg slightly beaten
- MIX:
- 1 lg. can pumpkin
- 2/3 c. brown sugar
- 3/4 c. milk
- 2 eggs
- 3/4 tsp. allspice or 1/4 tsp. of each: cinnamon, cloves, nutmeg
- TOPPING:
- 1 c. cake mix
- 1 tsp. cinnamon
- 1/2 c. sugar
- 1/4 c. melted oleo
7 UP SALAD

Dissolve jello in 2 c. boiling water
- Lg. pkg. family size lemon jello
- 2 c. water
- 12 oz. 7UP
- 3 bananas
- 1 can pineapple, crushed
- 1 sm. can mandarin oranges
- 1 c. mini marshmalllows
- 1/2 c. sugar
- 1 egg, slightly beaten
- 2 tbsp. flour
- 1/2 pint whipping cream
- marachino cherries to decorate
- nuts to decorate
Crepes Florentine

For crepes, in large bowl, combine milk, eggs, butter
- FILLING:
- 2 1/2 c. milk
- 4 eggs
- 1/4 c. butter, melted
- 2 c. flour
- 1/4 tsp. salt
- 8 tbsp. butter, divided
- 5 tbsp. flour
- 1/4 tsp. salt
- 1/4 tsp. pepper
- dash ground nutmeg
- 2 1/4 c. milk
- 1/3 c. heavy whipping cream
- 1 c. shredded Gruyere or swiss cheese, divided
- 1 1/2 c. finely chopped fresh mushrooms
- 1 shallot, finely chopped
- 1 (8oz) pkg cream cheese
- 1 egg
- 2 pkgs (10oz ea) frozen chopped spinach, thawed and squeezed dry
- 2 tbsp. shredded parm cheese
Creamy Swiss Steak

In shallow bowl, combine the flour, s&p; dredge beef
- 3/4 c. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 lbs. boneless beef round steak, cubed
- 2 tbsp. butter
- 1/2 c. chopped onion
- 2 cans condensed cream of mushroom
- 1 c. water
- hot cooked noodles
Tater Crust Tuna Pie

In med. bowl, combine the flour and potato flakes; cut in butter till crumbly
- CRUST:
- 1 c. flour
- 1/2 c. mashed potato flakes
- 1/2 c. butter
- 3-4 tbsp. ice water
- 1 can french fried onions (1.8oz)
- FILLING:
- 3/4 c. mashed potato flakes
- 1 c. shredded cheddar cheese, divided
- 2 tbsp. chopped stuffed green olives
- 1 can tuna, drained & flaked
- 1 can condensed cream of mushroom soup
- 1 egg

- 1/3 c. unsweet cocoa powder

- 1/4 c. powdered sugar

- 1 tsp. vanilla
- 4 c. powdered sugar

- 1 can mushroom stems & pcs.
- 2 med. onions, quartered and sliced

- 1/2 tsp. pepper
- 1 can (15oz) tomato sauce
- 1/4 c. cornstarch
- 1/4 c. cold water
