Mac and Cheese with Sourdough Breadcrumbs

Breadcrumb Topping: Heat oil in skillet over medium-high heat
- Breadcrumb Topping:
- 1 TBSP. olive oil
- 1 c. finely chopped shallots
- 1 TBSP. chopped fresh rosemary
- 2 c. Sourdough croutons, coarsely crumbled ( toss 3 1/2 c. 1" cubes crustless sourdough bread with 2 TBSP. olive oil. Spread the breadcrumbs on a heavy-duty rimmed baking sheet and bake @ 400 degrees for 20-25 minutes.
- 1/4 c. chopped fresh Italian parsley
- Mac and Cheese:
- 1/4 c. all-purpose flour
- 3/4 tsp. cayenne pepper
- 1/2 tsp. ground nutmeg
- 6 TBSP. (3/4 stick) butter
- 4 c. whole milk
- 3 c. (packed) coarsely-grated extra-sharp cheddar cheese, divided
- 3 c. (packed) coarsely grated Fontina cheese, divided
- 1/2 c. Grated Pecorino Romano cheese, divided
- 8 c. reserved cooked ziti
- Chopped fresh Italian parsley
Fruit Salad

Add the remaining ingredients and mix well
- 1 can Eagle Brand cream
- 1/3 c. lemon juice
- Mix above ingredients until it begins to thicken.
- 1 can drained Del Monte pineapple chunks
- 1/2 c. pecans
- 1 can drained fruit cocktail
- 1 lg. container Cool Whip
Caesar Salad

Make the croutons: Preheat oven to 350 degrees
- For the Croutons:
- 2 TBSP. unsalted butter
- 2 TBSP. olive oil
- 2 garlic cloves, halved
- 3 c. (3/4") cubes of Italian or French Bread
- For the Dressing:
- 2 flat anchovy fillets, or to taste, rinsed and drained
- 4 garlic cloves
- 2 tsp. sherry vinegar
- 2 tsp. fresh lemon juice
- 1 tsp. Worcestershire
- 1/2 tsp. dry mustard
- 1/2 c. olive oil
- 4 heads of romaine lettuce, the pale-green inner leaves washed, spun dry, and torn into bite-size pieces (about 12 c.) and the outer leaves reserved for another use.
- Parmesan curls formed with a vegetable peeler.
Spicy Buttermilk Fried Chicken

1. In a large bowl, combine buttermilk, hot sauce, and 1 1/2 tsp
- 1 quart buttermilk
- 1 TBSP. hot sauce
- 2 tsp. seasoned salt, divided
- 1 (4-5 lb.) chicken, cut into 8 pieces
- 2 c. all-purpose flour
- 1 tsp. gaarlic salt
- 1 tsp. ground red pepper
- 1 tsp. onion powder
- Peanut oil for frying
