Oats 'n' Honey Bars

Adjust oven rack to the middle of the oven and set the temperature to 375 degrees
- 7 cups old-fashioned rolled oats
- 1/2 cup vegetable oil
- 1 teaspoon salt
- 1 1/2 cups whole almonds, pecans, walnuts or peanuts
- 3/4 cup honey
- 3/4 cup packed brown sugar
- 1 Tablespoon vanilla extract
- 2 teaspoons ground cinnamon (optional)
Bulghur Pilaf w/ Pine Nuts

Melt butter in medium pot
- 1 T. unsalted butter
- 1 large clove garlic, minced
- 2 T. pine nuts
- 1/2 c. bulgur wheat
- 1 c. meat stock
- salt and pepper
Biscoff Cheesecake Ice Cream

Use a hand mixer to beat together the cream cheese, butter, and Biscoff spread until smooth
- 1 - 14.5 oz can sweetened condensed milk
- 1 - 8 oz. tub Cool Whip
- 1 - 8 oz brick of cream cheese, softened
- 1/4 cup butter, softened
- 1/2 cup Biscoff (smooth or crunchy, you're choice!)
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Oven Baked Fajitas

Serve with black beans, guacamole, sour cream
- 1 pound boneless, skinless chicken breasts, cut into strips (use 2# next time or add a smoked sausage ring)
- 2 Tbsp vegetable oil
- 2 tsp chili powder
- 1 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 tsp seasoned salt
- 1 (15 oz) can diced tomatoes with green chilies (Rotel)
- 1 medium onion, sliced
- 1/2 red bell pepper, cut into strips
- 1/2 green bell pepper, cut into strips
Sauerkraut Casserole

Layer large casserole or crockpot with sausage and sauerkraut (first layer leave just a little juice in)
- 1 large can sauerkraut drained
- 1 five pound bag of potatoes - peeled, cooked and mashed as if making mashed potatoes. Store bought mashed potatoes may be used (3 boxes).
- 2 pounds browned bulk sausage
Chicken Scallopine

Cook pasta according to package directions
- 1 # linguine
- 6 boneless, skinless, trimmed chicken breasts
- Flour
- Salt and pepper
- 2 T. olive oil
- 4 T. butter
- 12 oz. white mushrooms, sliced thin
- 1 c. dry white wine
- Chicken broth (optional)
- 1 lemon
- 1/2 c. half and half
- chopped fresh parsley
Spicy Peanut Vinaigrette

Pour peanuts into a plastic bag and pound to fine crumbs with a rolling pin
- 1/3 cup roasted, salted peanuts
- 1 clove garlic, finely grated
- 1/2 teaspoon red pepper flakes, or to taste
- 1 tablespoon fresh dill, minced
- 2 tablespoons fresh cilantro, including stems and minced
- 1 1/2 tablespoons white wine vinegar or rice vinegar
- 1/4 cup freshly squeezed orange juice
- 3 tablespoons extra virgin olive oil
- fine sea salt
- freshly ground black pepper
Grilled Mushroom Salad with Toasted Almonds

Note: You can make the marinated grilled mushrooms well ahead of time
- 7 ounces shiitake mushrooms
- 1 clove garlic, finely grated
- 7 tablespoons extra virgin olive oil
- fine sea salt
- freshly ground black pepper
- 2 teaspoons sweet paprika
- 1/2 cup almonds, slivered or sliced
- 1 tablespoon salted butter
- 2 tablespoons fresh lemon juice
- pinch sugar
- 10 cups mesclun greens
Apple Fritters

Beat. Deep fry 365-375 about four minutes
- 1 c. flour
- 1 T. oil
- 1 ½ t. baking powder
- 1/3 c. sugar
- ½ t. salt
- 1 egg
- ½ - ¾ c. milk
- 1 t. pumpkin pie spice
- 1 c. shredded, peeled apples
DIY Doggie Treats

Preheat oven to 350°. 2
- 2 cups 100% organic whole wheat flour (or wheat germ, or spelt, or rolled oats, or a mixture of these, etc.)
- 2 (4oz) jars of pureed baby food - beef, blueberry, sweet potato, chicken - whatever. Just make sure there are no onions/onion powder in it*. Avoid any with artificial preservatives (should be easy, most are just pureed veggies and water).
