Lebanese Beef Meatballs

Preheat the oven to 375 degrees Fahrenheit
- 1 1/4 pounds ground beef
- 1 small onion, peeled and chopped
- 3 tablespoons parsley, chopped
- 1 teaspoon extra virgin olive oil
- 1/2 teaspoon allspice
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon cayenne pepper
Crockpot Chicken and Noodles

Cook chicken, soup, butter, and broth in crock-pot on low for 6-7 hours
- 4 boneless skinless chicken breasts (I used frozen)
- 2 cans cream of chicken soup
- 1 stick of butter
- 2 15 oz cans chicken broth
- 24 oz. frozen egg noodles
Cowboy Cookies

Mix all DRY ingredients in a large mixing bowl, stir to mix ingredients Add: 1/2 c
- 1 1/3 c. quick-cooking oats
- 1 1/3 c. all-purpose flour
- 1 tsp. baking powder
- 1 t. baking soda
- 1/4 t. salt
- 1/2 c. chopped pecans
- 1 c. semi-sweet chocolate chips
- 1/2 c. packed brown sugar
- 1/2 c. white sugar
Israeli Couscous with Apples, Cranberries and Herbs

For the couscous: In a medium saucepan, heat the olive oil on medium-high heat
- Couscous:
- 2 tablespoons olive oil
- 2 cups Israeli couscous (or barley or orzo)
- 4 cups low-sodium chicken broth
- 1/4 cup chopped fresh flat-leaf parsley
- 1 1/2 tablespoons chopped fresh rosemary leaves
- 1 teaspoon chopped fresh thyme leaves
- 1 medium green apple, diced
- 1 cup dried cranberries
- 1/2 cup slivered almonds, toasted, see Cook's Note
- Vinaigrette:
- 1/4 cup apple cider vinegar
- 3 tablespoons maple syrup
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup olive oil
Quinoa-Stuff Avocados

Cook the quinoa according to package directions
- 3/4 c. quinoa
- 2 T. olive oil
- 1 small red onion, minced
- 1 ripe tomato, chopped
- 1 T. minced parsley
- 1/2 t. salt
- 1/4 t. black pepper
- 2 ripe Haas avocados
- 1 T. fresh lemon juice
- 4 large butter lettuce leaves
Vegetable Soup

Place beef in a slow cooker
- 1 pound cubed beef stew meat
- 5 c. Beef broth plus 1 c. wine OR 6 c. beef broth
- 1 small onion, chopped
- 1 can (28 oz.) crushed tomatoes
- 1 (16 oz.) package frozen mixed vegetables
- 2 potatoes, peeled and cubed
- 1 t. Ground black pepper
- 1 t. Dried basil
Einkorn Pie Dough

- 2 cups (240g) jovial einkorn flour, plus more to roll out dough
- 1 tsp. (8g) sea salt
- 2 sticks (227g) cold unsalted butter, cut into 1/4-inch cubes
- 1/4 cup (59g) ice water
Avocado and Tomato Salad

- 4 cups avocados, diced medium
- 2 cups grape tomatoes or 2 cups cherry tomatoes
- 2 cups cucumbers, peeled and diced medium
- 1 cup red onion, diced small
- 4 tablespoons fresh cilantro, chopped
- 2 teaspoons fresh garlic, minced
- 2 tablespoons lime juice
- 1/4 cup olive oil
- salt

Easiest Pineapple Cake

- 2 c all purpose flour
- 2 c sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp vanilla
- pinch salt
- 1 - 20 oz can of crushed pineapple ( undrained ) in it's own juice - not syrup
- 1 c chopped nuts, optional
- CREAM CHEESE FROSTING
- 1/2 c butter or 1 stick
- 1 - 8 oz cream cheese, softened
- 1 tsp vanilla
- 1 1/2 c confectioners' sugar
- coconut for garnish - optional
Ricotta Tart

1. Set the oven at 350 degrees
- DOUGH
- 1 cup flour
- 3 tablespoons granulated sugar
- 1/2 teaspoon finely grated lemon rind
- 1/8 teaspoon salt
- 6 tablespoons (3/4 stick) cold, unsalted butter, sliced
- 1 egg yolk, lightly beaten with 1 tablespoon water
- 1 egg white
- FILLING
- 4 tablespoons (2 ounces) cream cheese, at room temperature
- 1 1/2 cups (12 ounces) whole-milk ricotta
- 1/3 cup granulated sugar
- 2 eggs
- 1/2 cup heavy cream
- 2 teaspoons grated lemon rind
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- 1/8 teaspoon salt
- Confectioners’ sugar (for sprinkling)
