Chicken Alfredo Casserole

Preheat oven to 350*. Prepare pasta according to package directions
- 2 dry cups pasta (shells or elbow macaroni are really good for this recipe)
- 1 15-16 oz jar of a GOOD Alfredo sauce
- 1-2 cups cooked chicken, shredded or chunked
- 1/2 cup chicken broth
- 5 oz shredded Parmesan cheese
- 2 cups shredded mozzarella cheese (one 8 oz bag)
- 1-1/2 tsp minced garlic
- salt and pepper to taste
Chicken Salad w/ Grapes & Almonds

Mom used 16 oz. Roots white chicken breasts and 9 oz
- 4 c.boned and skinned chicken breasts, cubed
- 2 c. celery, thinly sliced
- 2 c. green grapes, halved
- 1 c. light Miracle Whip
- 2 T. lemon juice
- 2 T. cider vinegar
- 1 1/2 t. prepared mustard
- 1/2 t. salt, optional
- 1/2 t. sugar
- 1/8 t. sugar
- 1/8 t. black pepper
- 1 c. almonds
Old Fashioned Pancakes

Combine all the ingredients in a large mixing bowl and whisk them together
- 2 eggs
- 1 cup of cake flour
- 1 1/2 cups of milk
- 1/2 stick of melted butter
- 2 tbsp of castor sugar
- 1 tsp of salt
- 2 tsp of baking powder
- Ground cinnamon
- Brown sugar
- Lemon juice
Grandma's Soft Sugar Cookies

Preheat oven to 350 degrees Beat shortening and sugar together
- 2/3 c. shortening
- 1 c. sugar
- 2 eggs
- 1/3 c. milk
- 1 tsp. vanilla
- 3 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
Macadamia Key Lime Pie

In a small bowl, mix cookie crumbs, macadamia nuts and sugar; stir in butter
- FILLING:
- 1 cup crushed shortbread cookies
- 1/2 cup finely chopped macadamia nuts
- 1/4 cup sugar
- 1/3 cup butter, melted
- 1 package (8 ounces) cream cheese, softened
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup Key lime juice or lime juice
- 1 cup heavy whipping cream
- 1/4 cup coarsely chopped macadamia nuts
Turkey Gravy

Place this water in 2 c. measuring glass and whisk in 1/2 c
- Get 3 c. drippings (add one cup of water to pan and place over heat to stir up those drippings)
- 1 c. cold water
Tomato Pea Couscous

In a large saucepan, sauté onion and garlic in oil until tender
- 1/2 c. chopped onion
- 2 garlic cloves, minced
- 1 t. olive oil
- 1/2 t. cumin
- 1 c. reduced-fat chicken broth
- 1 c. frozen peas
- 1/2 c. tomato, coarsely chopped
- 3/4 c. uncooked couscous
Crockpot Christmas Crack

Layer all ingredients in a large crockpot (starting with peanuts)
- 1 - 16 oz jar(s) unsalted peanuts
- 1 - 16 oz. jar(s) salted peanuts
- 1 - 12 oz bag(s) semi-sweet chocolate chips
- 1 - 12 oz bag(s) milk chocolate chips
- 2 - 10 oz bag(s) peanut butter chips
- 2 - 1 lb pkg white almond bark or vanilla candy coating
Spaghetti Bolognese

You need a 14 1/2 oz can of the tomatoes
- 3/4 pound ground beef, 96/4% fat, extra, extra lean
- 1 onion -- finely chopped
- 2 garlic cloves -- minced
- 1 carrot -- chopped
- 3 cups fresh mushrooms -- sliced
- 1 can diced tomatoes
- 1 tablespoon tomato paste
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 cup skim milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper -- freshly ground
- 1/2 pound whole wheat spaghetti
