Put 1/2 t. chopped pecans in each tart shell, add 1 tsp
- For the tart shells, mix well:
- 1/2 pound oleo
- 2 3 oz. cream cheese
- 2 c. flour
- Roll into balls and refrigerate 1 hour. Press each ball into shape of little tart shell.
- For the filling, mix well:
- 1 1/2 c. brown sugar
- 2 t. melted butter
- 1 t. vanilla
- 2 eggs
Peach Cobbler

1. Preheat the oven to 425 degrees F
- For the filling:
- 8 fresh peaches (peeled, pitted, and sliced into chunks)
- 3 tablespoons white sugar
- 3 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 1 tablespoon cornstarch
- For the topping:
- 1.5 cup all-purpose flour
- 3 tablespoon white sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, chilled and cut into small pieces
- 1/4 cup boiling water
- To sprinkle on top:
- 1 tablespoon white sugar
- 1/2 teaspoon ground cinnamon
Panko Breaded Fish

Preheat oven to 350.. Combine butter and lemon juice in a shallow bowl
- 3/4 c.butter,melted
- 2 T lemon juice
- 1 c. panko bread crumbs
- 1/2 c. grated parmesan
- 1 1/2 # cod
- 2 T. fresh parsley, chopped
Baked Chicken

Preheat oven to 400°F. 2 Spray a shallow baking dish with non-stick cooking spray
- 4 chicken breasts, with bone and skin
- 1/4 cup butter, melted
- 1 -2 teaspoon Season-All salt (I use McCormick's)
Stuffed Mushrooms

Brown and crumble sausage
- 24 oz., fluid white mushrooms
- 1/3 pounds hot pork sausage
- 1/2 whole medium onion, finely diced
- 4 cloves garlic, finely minced
- 8 oz., softened cream cheese
- 1 whole egg yolk
- 3/4 c. parmesan cheese, grated
- 1/3 c. dry white wine
- salt and pepper to taste
Mom's Meatballs

Mix, brown and bake
- 1 1/2 # ground beef
- 2 eggs, beaten
- 1 t. salt
- 1/4 t. pepper
- 1/4 t. oregano
- 1/3 c. parmesan cheese
- 2 T. parsley
- 1/4 c. fine, dry bread crumbs
Butterscotch Oatmeal Cookies

1.) Preheat oven to 375. 2
- 1/2 c. granulated sugar
- 3/4 c. light brown sugar, packed
- 1 c. butter or margarine, softened
- 2 large eggs
- 1 t baking soda
- 1 t. vanilla extract
- 1/2 t. salt
- 3 c. oatmeal (old fashioned or quick)
- 1 1/4 c. flour
- 1 (11 oz.) pkg. butterscotch baking chips
- chopped nuts (optional)
Lighter Eggplant Parmesan

- 1 large eggplant (2 lbs)
- 1 tbsp olive oil
- 12 oz fat free ricotta
- 1/4 cup + 2 tbsp Pecorino Romano
- 1/4 cup fresh parsley, chopped
- 1 medium egg
- 2 cups reduced fat mozzarella (I used Sargento)
- 3 cups homemade tomato sauce
- salt

Hot & Sour Bok Choy

Heat wok; add oil and let come to a moderate temperature
- 5 T oil
- 3 dired small hot chiles
- 1/2 t.Szechwan peppercorns, coarsely ground ( or black peppercorns)
- 1 Chinese cabbage, cut into 1 inch dice
- 2 t salt
- 2 T. soy sauce
- 2 T. rice vinegar
- 1/4 t. sesame oil
