Do Ahead Brunch Bake

Place potato patties in a 13 by 9 baking dish coated with nonstick cooking spray
- 8 frozen hash brown patty
- 1 package 8 oz diced fully cooked ham
- 1 1/4 cups shredded reduced fat Cheddar cheese -- divided
- 2 cups fat-free milk
- 1 can 10 3/4 oz can lowfat cream of mushroom
- soup, condensed
- egg substitute -- equal to 4 eggs
- 1 teaspoon mustard powder
- 1/4 teaspoon pepper
Easy Bacon Pea Salad

- 1 pound of bacon, cooked according to package instructions, drained and crumbled or finely chopped

- 1 1/2 - 1 1/2 cups white whole wheat flour
- 1 - 1 cup whole wheat flour
- 2 - 2 tsp baking soda
- 2 - 2 tsp ground ginger
- 1/2 - 1/2 tsp ground cloves

- 1 tsp minced garlic
- 2 eggs, slightly beaten
- 1/4 cup soy sauce

Preheat oven to 375. Whisk cream cheese and milk until smooth
- 4 oz. cream cheese, softened
- 3/4 c. milk
- 3 eggs, beaten
- 1 can (15 1/2 oz.) whole kernel corn, drained
- 1 can (15 1/2 oz.) cream style corn
- 1 pkg. (8 1/2 oz.) corn muffin mix
- 1 c. shredded cheddar cheese
Curried Chicken Salad w/ Grapes

Combine the chicken, grapes, carrot, celery, parsley and lemon juice in a medium bowl
