Caldo Verde (Portuguese Green Soup)

In a large saucepan over medium heat, cook onion and garlic in 3 tablespoons olive oil for 3 minutes
- 4 tablespoons olive oil, divided
- 1 onion, minced
- 1 clove garlic, minced
- 6 potatoes, peeled and thinly sliced
- 2 quarts cold water
- 6 ounces linguica sausage, thinly sliced
- 2 1/2 teaspoons salt
- ground black pepper to taste
- 1 pound kale, rinsed and julienned
Cracker Corn

Heat corn and milk gradually
- 2 16 oz. cans cream style corn
- 2 c. milk
- 2 well beaten eggs
- 2 c. saltine cracker crumbs
- 1/2 c. minced onion
- 1/4 c. melted butter mixed w/ 1 c. cracker crumbs
Greek Salad Dressing

In a blender or food processor, whirl all the ingredients except the buttermilk for one minute
- 1/2 c. olive oil
- 2 T. red wine vinegar
- 1 t. sugar
- 2 garlic cloves, minced fine
- 1 t. dried oregano
- 1 T. chopped fresh dill
- salt and pepper
- 3/4 c. feta cheese,crumbled
- 1/2 c. buttermilk (or milk, but buttermilk is best)
Baked Chicken Parmesan

Preheat oven to 450°. Spray a large baking sheet lightly with spray
- 4 (about 8 oz each) chicken breast, fat trimmed, sliced in half to make 8
- 3/4 cup seasoned breadcrumbs (I used whole wheat)
- 1/4 cup grated Parmesan cheese
- 2 tbsp butter, melted (or olive oil)
- 3/4 cup reduced fat mozzarella cheese (I used Polly-o)
- 1 cup marinara or Filetto di Pomodoro
- cooking spray
Sausage Stuffed Zucchini Boats

Bring a large pot of water to boil
- 1 1/4 cups quick marinara sauce
- 4 (31 oz total) medium zucchini
- 1 tsp oil
- 1/2 small onion, finely diced
- 3 cloves garlic, crushed
- 1/2 cup diced red bell pepper
- 14 oz lean Italian chicken sausage, removed from casing (Al Fresco)
- 1/2 cup part skim shredded mozzarella (Polly-O)
- 8 tsp grated Parmesan cheese
Unstuffed Cabbage Rolls

In a large skillet, heat olive oil over medium heat
- 1 1/2 to 2 pounds lean ground beef
- 1 tablespoon oil
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 small cabbage, chopped
- 2 cans (14.5 ounces each) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 1/2 cup water
- 1 teaspoon ground black pepper
- 1 teaspoon sea salt
Peanut Butter "Buckeye" Pretzel Bites

Line a baking sheet with wax paper and set aside
- 1 cup creamy peanut butter
- 3/4 cup brown sugar
- 2 Tbs softened butter
- 1/2 cup powdered sugar
- minature pretzels
- 1 bag of chocolate chips or Merkins Choc. wafers
Olive Garden Alfredo Sauce

Make Pasta to your liking
- 1 pkg Pasta (penne or fettuccine)
- 1 stick of butter
- 1 clove of minced garlic
- 1 pint of heavy cream
- 1 cup of fresh Parmesan cheese
- 2 tbsp cream cheese
- 1/4 tsp salt
- 1/2 tsp white pepper
Easy Einkorn Biscuits

Pour over dry ingredients and just stir together
- 2 C Einkorn,
- 1 tsp salt
- 1 Tb baking powder, stir together.
- 3 Tb Jovial olive oil
- and the rest buttermilk to make 1 cup.
Mandarin Orange Salad

Mix together Cool Whip and Instant vanilla pudding (do NOT make the pudding, just use it dry)
- 1 pkg Vanilla Instant Pudding Mix (use dry) I would use sugar free
- 1 Large can Crushed Pineapple (undrained)
- 2 Medium/Large cans Mandarin Oranges (drained)
- 1 pkg Cool Whip 8 oz ( and you could use fat free)
