- large raw shrimp, butterflied and de-veined
- poblano pepper, cut in narrow strips
- bacon, cut in 1/3
- monterey jack cheese, cut in strips slightly shorter than the length of the shrimp
- Salt
- Pepper
- Cayenne pepper

- 1 1/2 C crumbs graham crackers
- 1/4 to 1/2 C XXX sugar
- 6 Tbsp melted butter
- 1 tsp cinnamon

- Flour
- Salt

Crab Gratin

Heat olive oil in a frying pan, add leek and garlic
- 8 ounces cooked crabmeat
- 1 leek, white part only, chopped finely
- 5 leaves of Savoy cabbage, sliced finely
- 1 tomato, cut into small cubes
- 2 cloves garlic, minced
- 1 tsp chopped tarragon
- 2 Tbsp white wine
- few threads of saffron
- 2 Tbsp olive oil
- 2 Tbsp unsalted butter
- 1/4 cup plain flour
- 2 cups milk
- 1/3 pound comté or gruyere cheese, grated
- 2 oz parmesan cheese
- 2 oz gruyere cheese, to sprinkle on pasta
- 3 Tbsp of fresh breadcrumbs (optional)
- 3/4 lb shell macaroni
- Salt & pepper
- dash of cayenne pepper

- 2 medium onions, coarsely chopped
- 2 medium leeks, white and pale-green parts only, rinsed and coarsely chopped

- 2 celery stalks, coarsely chopped
- 2 dried bay leaves
- 3 sprigs fresh thyme
- 3 sprigs fresh flat-leaf parsley
- 2 teaspoons whole black peppercorns
- Freshly ground pepper
- 1 fresh whole turkey (18 to 20 pounds), rinsed and patted dry, giblets and neck reserved for gravy
- Gravy
- 1/2 cup unsalted butter (1 stick), melted, plus 1/4 cup unsalted butter, softened

Graham Dessert

Bake in 8" sq greased pan at 350 °F for 25 minutes
- Mix:
- 3 egg yolks
- 1 C sugar
- 1 Tbsp brown sugar
- 1 C chopped walnuts or pecans
- 11 graham crackers, crushed
- Fold in 3 egg whites stiffly beaten.
Asparagus Casserole

Combine melted butter with crushed crackers and spread half in an 8 x 8" pan
- 1 stick butter, melted
- 36 Waverly wafers (crackers), do not substitute
- 2-3 cans asparagus, well-drained
- 4 Tbsp butter
- 3 Tbsp flour
- 1/2 C milk
- 1 jar Old English cheese
- toasted almonds
Cranberry Apple Crisp

Preheat the oven to 375°
- 4 lg. green apples, peeled, cored, and sliced 1/2″
- 1 c. fresh cranberries
- 3/4 c. brown sugar, firmly packed
- 1/2 c. flour
- 1/2 c. old fashioned Quaker oats
- 3/4 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1/3 c. softened butter
