Parmesan and Gruyere Souffle

1. Preheat the oven to 400°F (200°C) and place a baking sheet in it to warm
- 3 tablespoons butter, plus melted butter for the baking dish(es)
- 2 1/2 tablespoons flour
- 1 1/4 cups milk
- 4 cage-free, organic eggs
- 1/2 cup finely grated Gruyère cheese
- 1 cup finely grated Parmesan, plus more for the baking dish(es)
- Salt and freshly ground pepper
- Pinch cayenne pepper
- Freshly grated nutmeg
Bacon and Spinach Mini Quiches

Drain spinach very well. Wring it out with your hands if you have to just make sure it’s very well drained
- 1 12-oz. package frozen chopped spinach, thawed
- 3-4 slices thick-cut bacon
- 1 medium onion, diced
- 2 teaspoons minced garlic
- 8 ounces swiss cheese, shredded (about 2 cups)
- 1 teaspoon salt
- 1/2 teaspoon thyme

- 1 pkg corn tortillas
- 2 cans enchilada sauce
- 1 small onion, chopped

- 1 quart (4 cups) cold water
- 1/4 cup salt

- Buffalo Hot Sauce:
- 2 lbs. chicken wings
- 2 Tbsp. vegetable oil
