- 1 cup milk
- 1/4-pound (1 stick) unsalted butter
- 1 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- Pinch nutmeg
- 1 cup all-purpose flour
- 4 extra-large eggs
- 1/2 cup grated Gruyere, plus extra for sprinkling
- 1/4 cup freshly grated Parmesan
- 1 egg beaten with 1 teaspoon water, for egg wash
Mango Margaritas

Zest the limes and lay the zest on a plate
- 2 whole Limes
- 2 Tablespoons Coarse Sugar (decorator's Sugar)
- 2 jars (20 Ounce) Mango Chunks, Drained
- 1-1/2 cup Tequila
- 1-1/2 cup Triple Sec
- 1/4 cup Sugar
Asparagus Pasta

Trim asparagus 1/2" long. Blanch for 2 minutes in boiling water and drain
- 1 # fresh asparagus
- 2 Tbsp olive oil
- 6 Tbsp butter
- 2 green onions, chopped
- 1/2 C parmesan cheese
- 1/2 # fresh pasta
Crab Stuffed Tomatoes

Remove cores of tomatoes leaving a cavity for filling
- 20 cherry tomatoes
- 1 C mayonnaise
- 1/4 C chopped shallots
- 2 Tbsp chives
- 2 tsp tarragon
- 1 Tbsp parsley
- 1 tsp thyme
- 2 Tbsp basil
- 1 Tbsp garlic, finely minced
- 1 hard cooked egg, sieved fine
- 1/2 # crabmeat
- salt and pepper to taste
Popcorn with Bacon

1. Heat a cast-iron or other heavy frying pan over low heat and cook the bacon slowly
- 4 slices bacon
- 2 tablespoons unsalted butter, plus more as needed
- 1/2 cup popping corn, preferably organic
- 1/4 cup maple syrup
- Coarse salt, preferably smoked salt flakes, as needed
Chinese Noodle Cookies

Melt bits in a double boiler
- 6 oz semi-sweet chocolate bits
- 6 oz butterscotch bits
- 3 oz oriental noodles
- 7 1/2 oz peanuts
Sausage Bake

- Brown, drain and put in dish:
- 1/2 # sausage
- small green pepper
- small onion
- 1/2 tsp thyme
- Mix until frothy:
- 3 eggs
- 1 C cream (or 2/3 milk)
- 2 Tbsp parmesan cheese
Milk Punch

- 2 C vanilla ice cream
- 1 1/2 oz brandy
- 1 oz milk
- 1 tsp vanilla
- nutmeg sprinkle as garnish
Kolb's Dressing

- 1 C creole mustard
- 1/4 C tarragon vinegar
- 1/4 C salad oil
- 1 Tbsp sugar
- 1/4 C water
- 2 Tbsp lemon juice
Hot Crab Dip

1. Preheat oven to 400 degrees with a rack in the center
- 3 tablespoons unsalted butter
- 2 medium shallots, minced
- 1/4 teaspoon cayenne pepper
- 3/4 teaspoon Old Bay seasoning
- 1 1/2 teaspoon dry mustard
- 3/4 cup half-and-half
- 8 ounces cream cheese, cut into small pieces
- 4 ounces sharp white cheddar cheese, grated on the large holes of a box grater (about 1 3/4 cups)
- 3 tablespoons freshly squeezed lemon juice
- 2 teaspoons Worcestershire sauce
- 10 ounces lump crabmeat, picked over for cartilage
- 1/2 cup chopped fresh flat-leaf parsley
- 2 slices white bread, crusts removed, torn into 1/4-inch pieces
- 1/2 teaspoon paprika
- Toast points, for serving
