Pour immediately into large shallow baking dish and turn to spread evenly
- Mix thoroughly:
- 2 14oz cans sweetened condensed milk
- 2 12oz cans evaporated milk
- 4 large eggs + 2 egg yolks
- 1 tsp vanilla
- Prepare caramel:
- Put 1 1/2-2 C sugar in a non-stick fry pan with rounded edges. Cook slowly over medium heat until sugar melts. Stir constantly with wooden spoon until consistency of golden maple syrup.
Fancy's Quiche

Whisk together eggs, flour, mayo and half & half
- 1 9" deep dish pie crust
- 4 eggs
- 1 C half & half
- 1/2 C mayonnaise
- 6-8 oz shredded cheese
- 2 Tbsp flour
- 4 slices cooked bacon (or other breakfast meat)
- 1/2 box frozen spinach*
- Salt and pepper to taste
- I used 5 oz box fresh baby spinach and cooked it on stove w/ 1 Tbsp olive oil, shallots and salt)

In 12qt stockpot, melt butter over low
- 4 sticks butter
- 3 C all-purpose flour
- 2 red bell peppers, diced
- 2 green bell peppers, diced
- 2 medium onions, diced
- 2 celery stalks, diced
- 1 1/4 gallons (20 C) chicken stock
- 1 # andouille sausage, 14" thick slices
- 2 Tbsp Creole seasoning
- 2 Tbsp kosher salt
- 1 tsp fresh ground pepper
- 1 tsp dried hot red pepper flakes
- 1 tsp chili powder
- 1 tsp dried thyme
- 1 Tbsp minced garlic
- 2 bay leaves
- 3 1/2 # chicken, roasted and boned
- hot sauce to taste

- 1 stick butter
- 3 C thin-sliced leeks
- 6 medium onions (4 1/2C), thin sliced
- 2 Tbsp minced garlic (12 cloves)

- 1 tsp dried thyme

Place the dried morels in a bowl and pour 2 cups boiling water over them
- 1-ounce dried morel mushrooms
- 1/2 pound fresh porcini or cremini mushrooms
- 4 cups chicken stock, preferably homemade
- 6 tablespoons (3/4 stick) unsalted butter
- 2 ounces pancetta, diced
- 1/2 cup chopped shallots (3 shallots)
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine
- 1/2 teaspoon saffron threads
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
