Heat a wok over high heat and add oil
- 1 Tbsp canola oil
- 1/2 C shitake mushrooms, quartered
- 1/2 C button mushrooms,, quartered
- 1/2 C straw mushrooms
- 1 Tbsp pickled ginger, shredded
- 1 tsp garlic, minced
- 1/4 C chicken stock
- 1 tsp sugar
- 1/4 C oyster sauce
Baked French Toast

- 1 loaf Crusty Sourdough Or French Bread
- 8 whole Eggs
- 2 cups Whole Milk
- 1/2 cup Whipping (heavy) Cream
- 3/4 cups Sugar
- 2 Tablespoons Vanilla Extract
- Topping
- 1/2 cup All-purpose Flour
- 1/2 cup Firmly Packed Brown Sugar
- 1 teaspoon Cinnamon
- 1/4 teaspoon Salt

Greek Quinoa Salad

1. Using a strainer, rinse the quinoa under cold water
- To make the dressing:
- 2 cups water
- 1 cup quinoa
- Pinch of salt
- 1 cup grape tomatoes, halved

- 3 cups milk

- 2 to 3 bay leaves
- 2 pounds large shrimp, peeled and deveined, tails on
- Pinch cayenne pepper, adjust to personal preference
- 1/2 lemon, juiced

- 2 tablespoons finely chopped fresh flat-leaf parsley

Better Than Sex Chex Mix

Into large microwavable bowl, measure cereal; set aside
- 8 cups Chocolate Chex cereal
- 3/4 cup packed brown sugar
- 6 tablespoons butter or margarine
- 3 tablespoons light corn syrup
- 1/4 teaspoon baking soda
- 1 cup Reese's Peanut Butter Cups, MINI size
- 1 cup MINIATURE marshmallows
- 1/2 cup caramel bits (found by the chocolate chips in the baking aisle -- or chop up regular caramels)
- 1 Tbsp heavy cream
- 1/2 cup MILK chocolate baking chips (add more if you are a chocolate lover like me)
- 1/2 cup vanilla (white) chocolate baking chips
- 1 tsp coarse sea salt

- 2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
- 1/4 cup Chopped Onion
- 1 clove Garlic, Minced
- 1 whole Jalapeno, Quartered And Sliced Thin
- 1/4 teaspoon Sugar
- 1/4 teaspoon Salt
- 1/4 teaspoon Ground Cumin
- 1/2 cup Cilantro (more To Taste!)
- 1/2 whole Lime Juice
Peach-Whiskey Barbeque Chicken

Preheat oven to 300 degrees
- 12 whole Chicken Thighs, Bone-in, Skin-on
- 2 Tablespoons Olive Oil
- 2 Tablespoons Butter
- 1 whole Yellow Onion, Diced
- 1-1/2 cup Whiskey
- 12 ounces, fluid Barbecue Sauce
- 1 jar Peach Preserves
- 1/2 cup Water
- 2 Tablespoons Worcestershire Sauce
- 4 cloves Garlic, Peeled
- 3 whole Green Onions, Sliced Thin
Creamy Corn Soup

Heat a medium size stockpot over medium high heat for 1 minute
- 6 slices of bacon fried until crisp and drained on a paper towel. Set aside
- 10 Ears of corn, husks removed and kernels sliced from cob. Yields approximately 7 to 8 cups of kernels. Set aside I cup of corn kernels to use as garnish
- 1/4 cup extra Virgin Olive Oil
- 2 leeks, chopped in 1/4” inch rounds and place in a bowl with water to remove grit. Drain on paper towel and dry.
- 8 scallions
- 3 tablespoon unsalted butter
- 1 large jalapeño chopped small
- 1/4 cup dry sherry
- 1 quart of organic chicken broth
- 5 sprigs fresh thyme
- 1/2 teaspoon kosher salt and cracked pepper plus extra salt for garnish
Chicken/Mushroom Roulade

Dice mushrooms. Saute' them in some butter and olive oil until they're tender
- Chicken breasts pounded thin (Smart Chicken sells thin cut breasts that are easier to work with)
- Mushrooms (use shiitake or something with flavor on its own)
