Secondo - Beef - Braciole Alla Contadina

"Meat of the Peasants"
- 800 grams ‘braciole’ ( sliced quite thin about .5 cm) of beef eg. groppa, noce, sottonoce o scamone.
- 250 grams diced tomatoes ( tinned) or very mature fresh tomatoes ( Roma or ‘egg’ tomatoes preferable
- 1 stalk of celery
- 1 carrot
- 2 garlic cloves
- 3 basil leaves
- 6 tablespoons of olive oil
- 1 glass of red wine
- salt & pepper to taste
Ritz Carlton Lemon Pound Cake

Preheat oven to 350 degrees
- 3 cups all-purpose flour
- 1 Tbsp baking powder
- 3/4 tsp salt
- 3 cups sugar
- 1 cup unsalted butter, room temperature
- 1/2 cup shortening, room temperature
- 5 large eggs
- 1 cup whole milk
- 6 Tbsp lemon juice
- 1 lemon, zested
Beer Battered Fried Shrimp

Butterfly shrimp. Mix beer with cornstarch
- 1 1/2 # large shrimp
- 2/3 C beer (flat)
- 2 Tbsp cornstarch
- 2/3 C water
- 1/2 tsp Worcestershire
- 2 eggs
- 1 1/4 C flour
- 1/2 tsp salt
- 1/8 tsp white pepper
Fried Shrimp

Combine first three ingredients and pour onto flat plate
- 1 cup flour
- 2 teaspoons garlic powder
- Freshly ground pepper
- 2 eggs
- 1 cup milk
- 36 saltines
- 1 pound shrimp, medium or large
- Vegetable oil or shortening
Green Chili Cheese Cornbread

Preheat your oven to 400 degrees
- 1 cup yellow cornmeal
- 1 cup all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1/4 cup sugar
- 1 (heaping) cup grated sharp cheddar cheese
- 1 4-oz can diced green chilies
- 2 eggs
- 1 cup buttermilk
- 1/2 stick butter, melted
Parmesan Tortilla Chips

Preheat oven to 375 degrees
- 1/4 cup extra-virgin olive oil
- 1/2 tsp dried oregano
- 1/2 teaspoon black pepper
- 8 corn tortillas
- 1/4 cup shredded Parmesan cheese
- 1/4 tsp Kosher salt

In a large saucepan put 3 litres of water , all vegetables very roughly chopped and bring to boil
- 1 kilo of Veal
- 3 eggs
- 200 grams of tuna
- 2 teaspoons of capers
- 6 anchovies fillets
- 1 glass olive oil
- salt & pepper
- 1 stalk of celery
- 1 carrot
- 1 small red onion
- parsley
- 1 lemon
Roasted Buffalo Shrimp

1.Preheat oven to 450 degrees
- Finely grated zest of 2 lemons (2 tablespoons), plus 2 tablespoons fresh lemon juice
- 2 garlic cloves, minced
- 3/4 teaspoon celery seeds
- 2 1/2 teaspoons sweet paprika
- 1/4 teaspoon cayenne pepper, or more to taste
- Coarse salt
- 2 tablespoons honey
- 1/4 cup extra-virgin olive oil
- 1 1/2 pounds large shrimp, peeled and deveined, tails intact
- 1 cup sour cream
- 1/4 cup pale-green celery leaves, finely chopped

- 1 pint whipping cream
- XXX sugar
- 1/2 tsp vanilla
Crab Cakes

I've adapted this from Mr B's recipe (one of my favorite New Orleans restaurants)
- 1 lb fresh crab claw meat
- 1/3 cup Hellman's lite mayonnaise
- 1/4 cup panko breadcrumbs
- 1 Tbsp minced green pepper
- 3 Tbsp minced green onions
- 3 dashes Tobasco
- 1/4 tsp Emeril's Original Essence seasoning
- 1 1/2 tsp lemon juice
- Olive oil
- Butter
