Chocolate Cupcakes and Peanut Butter Icing

Preheat the oven to 350 degrees
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 2/3 cup granulated sugar
- 2/3 cup light brown sugar, packed
- 2 extra-large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 1 cup buttermilk. shaken, at room temperature
- 1/2 cup sour cream, at room temperature
- 2 tablespoons brewed coffee
- 1 3/4 cups all-purpose flour
- 1 cup good cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon kosher salt
- Kathleen’s Peanut Butter Icing (see recipe)
- Chopped salted peanuts to decorate (optional)
- Peanut Butter Icing
- 1 cup confectioners’ sugar
- 1 cup creamy peanut butter
- 5 tablespoons unsalted butter, at room temperature
- 3/4 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 1/3 cup heavy cream
Asparagus and Corn Salad

Fill a large pot with water and bring it to a boil
- 3 ears corn, shucked
- 2 bunches asparagus, ends trimmed and cut in 1 inch pieces
- 1/2 cup chopped fresh herbs (cilantro, basil, parsley, whatever you like)
- 1/4 cup olive oil
- 1 tbsp lemon juice
- 1 tbsp rice wine vinegar
- 1 tsp honey (can replace with sugar or agave)
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Bacon-Wrapped Jalapeno Chicken Bites

Chicken spread with cream cheese and jalapenos, rolled and wrapped with bacon, then grilled
- 8 chicken tenders, flattened and cut in two
- 3-ounce package softened cream cheese
- 1 jalapeno pepper, seeded and finely chopped
- 8 slices bacon, cut in half
Striped Sea Bass and Preserved Lemon Dressing

Fish Preheat oven to 450 Salt/Pepper skin side of the filet
- Fish
- Sea Bass Filet
- Olive Oil (or vegetable oil)
- 2 Tbsp Butter
- Salt/Pepper
- 3 whole garlic pods
- Rosemary
- Thyme
- Dressing
- 1 preserved lemon, store-bought or homemade, cut in quarters (see note)
- 1 pint of mayonnaise
- 1/2 cup rice wine vinegar
Crawfish Etouffee

Place 1/3 C chopped onions handy
- 1 C onions
- 2 tsp oil
- 1 Tbsp flour
- 6 Tbsp margarine
- 1/3 C celery
- 1/3 C green pepper
- 2 tsp chopped garlic
- 1 tsp catsup
- 2 Tbsp green onions
- 1 1/2 Tbsp parsley
- 1 # crawfish tails
- 1 C seafood stock
- Seasoning Mix (1 tsp salt; 1/2 tsp cayenne; 1/4 tsp black pepper)
Tortilla Soup - This is THE one!

I've been trying for some time to replicate Houston's recipe for Tortilla Soup that they serve every Wednesday
- Toppings:
- 3-4 Tbsp vegetable or canola oil
- 6 corn tortillas, chopped in roughly 1" squares
- 3 cloves garlic, minced
- 1 medium yellow or white onion, chopped
- 2 Tbsp ground cumin
- 1 Tbsp chili powder
- 3 bay leaves
- 6 C chicken stock
- 1 tsp salt
- 1/2 tsp cayenne pepper
- Chicken from one Rotisserie Baked chicken, rough chop
- 3 Tbsp fresh cilantro
- Monterey Jack cheese, shredded
- Sharp cheddar cheese, shredded
- 1-2 avocados, sliced
- Fresh cilantro
- Corn tortillas, sliced into 1/2" strips and fried crisp
Artichoke Dip

Put in buttered baking dish and bake at 350 °F until bubbly, about 30 minutes
- 7 1/2 oz can artichoke hearts, drained and chopped
- 1 C mayonnaise
- 1 C Parmesan cheese
- Juice of 1 lemon
- Cayenne pepper to taste
Fudge

Combine sugar, salt, milk and butter; boil for 6 minutes
- 4 1/2 C sugar
- dash salt
- 13 oz evaporated milk
- 2 Tbsp butter
- 12 oz semi sweet chocolate bits
- 12 oz German's chocolate
- 2 C marshmellow cream
- 2 C chopped pecans
Turkey Legs (aka Caveman Pops)

In a pot, combine water with the salt, sugar, brown sugar, 2 tablespoons seasoning blend, and bay leaf
- BRINE:
- 10 whole Turkey Legs
- 4 quarts Water
- 1 cup Kosher Salt
- 1 cup Sugar
- 1 cup Brown Sugar
- 2 Tablespoons Seasoning Blend (I Used Montreal)
- 1 whole Bay Leaf
- Dry Rub
- 2 Tablespoons Chili Powder (less If You Don't Like Things Too Spicy!)
- 2 teaspoons Seasoning Blend (I Used Montreal)
- 2 teaspoons Paprika
- 2 teaspoons Onion Salt
Cajun Spice Mix
