White Bean soup

In a 3 1/2 quart Dutch oven medium heat, warm 2 tablespoons oil
- 1/4 cup olive oil, plus more for brushing
- 1/4 cup pancetta,chopped.
- 1/2 yellow onion chopped
- 4 garlic cloves minced.
- 3 cans each 15 ounces cannellini beans, drained.
- 5 cups chicken broth.
- 3/4 teaspoon finely chopped fresh thyme.
- 1/2 cup grated Parmesan cheese.
- Kosher salt and freshly ground black
- 12 baguette slices, each 4 inches long and 1/2 inch thick.
- 1 .jar roasted red bell peppers.
- 2 tablespoons finely chopped fresh flat lea parsley.
- 1 teaspoon sherry vinegar.
- 1/2 teaspoon red pepper flakes.
- 1/2 teaspoon honey

- Kosher salt and pepper to taste.
- 4 ounces pancetta cut into 1/2 inch dice.
- 1 yellow onion, finely chopped.
- 2 carrots, peeled and finely diced.
- 1 celery stalk, finely diced.
- 5 garlic cloves minced.
- 1/3 cup tomato paste.
- 1 cup dry red wine.
- 1 cup milk.
- 2 cans each 28 oz whole tomatoes passed through a food mill.
- 2 bay leaves.
- 1 parmigian cheese rind.
- 1 pound tagliatelle cooked.
