Lemon-Pistachio Biscotti

1. Lightly grease 2 cookie sheets; set aside
- 1/3 cup butter, softened
- 2/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 4 teaspoons finely shredded lemon peel
- 1-1/4 cups pistachio nuts
Hot German Potatoe Salad with bacon and scallions

Boil potatoes in a pot of salted water until tender, 15-20 minutes
- 1 lb small red potatoes roughly chopped
- 4 strips turkey bacon diced
- 1 Tbsp all purpose flour
- 1/2 cup cider vinegar
- 2 Tbsp light brown sugar
- 1/4 c chopped scallions

- 1-1/2 cups dried cranberries
- 2/3 cup orange juice
- 1/2 cup butter (no substitutes)
- 3/4 cup sugar
- 1-1/2 teaspoons baking powder
- 2 eggs
- 4 teaspoons finely shredded orange peel
- 2-1/4 cups all-purpose flour
- 1/3 cup chopped crystallized ginger
Slow Cooker Applesauce Cake

1. Coat slow cooker bowl with nonstick cooking spray
- 1-1/2 cups all-purpose flour
- 1-1/2 teaspoons pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder

- 5 tablespoons unsalted butter, softened
- 1/2 cup light-brown sugar

Tuscan Grilled Chicken with warm Gorgonzola Sauce

Preheat grill to medium high heat (350-400 degrees)
- 8 boneless skinless chicken breasts
- 1 16 oz. chicken broth
- 3/4 c heavy whipping cream
- 1/3 c crumbled Gorgonzola cheese
- 2 cloves garlic, minced
- 1 tsp ground black pepper
- 1/4 c sun-dried tomatoes in oil drained
- 1/4 c capers,drained
PORK MEDALLIONS WITH CUMBERLAND SAUCE

Heat 2 teaspoons oil in a nonstick skillet over medium-high heat
- 1 tbsp. vegetable oil
- 1 lb. pork tenderloin, trimmed & cut into 1" thick medallions
- Salt & freshly ground black pepper
- 2 tbsp. minced onions or shallots
- 1 c. dry red wine
- 1 tsp. cornstarch
- 1 tbsp. fresh lemon juice
- 2 tbsp. red currant jelly
- 1 tsp. brown sugar (optional)
- 1 tsp. Dijon mustard
