Raspberry Lime Rickey Cake

Ever heard of a lime rickey? NO?! Then you've missed one of summer's most refreshing drinks
- Cake
- 1 cup unsalted butter, softened or room temperature
- 2 cups sugar
- 1 1/4 teaspoons salt
- 4 large eggs
- 2 teaspoons baking powder
- 3 cups King Arthur Unbleached All-Purpose Flour
- 1 cup milk
- finely grated rind of 2 limes; 1 to 2 tablespoons, lightly packed, OR 1/2 teaspoon lime oil
- Glaze
- 1/3 cup freshly squeezed lime juice
- 2/3 cup sugar, superfine preferred; Baker's Special Sugar is a good choice here
- Raspberry sauce
- 3 1/2 to 4 cups raspberries; frozen are fine
- 1 tablespoon Pie Filling Enhancer, optional for thickening
- 2 tablespoons sugar, to taste
- Sugar topping, optional
- 1/2 cup coarse white sparkling sugar
- 1/8 teaspoon lime oil

Chunky Apple Cake

Stir together first 4 ingredients in a large bowl until blended
- 1/2 cup butter, melted
- 2 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 4 Granny Smith apples, peeled and sliced
- 1 cup chopped walnuts, toasted
- Cream Cheese Frosting
- Chopped walnuts, toasted (optional)
Key Lime Pie With A Pretzel Crust

A pretzel crust adds a new twist to this classic pie
- Crust
- 1 cup + 2 tablespoons very finely ground salted pretzel crumbs
- 3 tablespoons sugar
- 7 tablespoons butter, melted
- Filling
- 4 large egg yolks
- two 14-ounce cans sweetened condensed milk
- 3/4 cup Floribbean Key lime juice
- 3 tablespoons Persian lime juice (the juice of 1 medium lime), optional
- zest of 1 lime (about 2 teaspoons), optional
- Crust
- 4 1/4 ounces very finely ground salted pretzel crumbs
- 1 1/4 ounces sugar
- 3 1/2 ounces butter, melted
- Filling
- 4 large egg yolks
- two 14-ounce cans sweetened condensed milk
- 6 ounces Floribbean Key lime juice
- 1 1/2 ounces Persian lime juice (the juice of 1 medium lime), optional

Heat oil in sauce pan and then add onion and garlic cook until tender
- 1/4 cup olive oil
- 1 medium onion chopped
- 2 closers garlic minced
- 1 can -- 28 ounces -- Italian plum tomatoes
- 1/4 cup dry white wine
- 2 tablespoons of fresh cut basil
- 2 pounds soft flesh fish fillets cut into chunks

- 4 large egg whites at room temperature
- 1 teaspoon cream of tartar
- 1 cup plus 2 tablespoons superfine granulated sugar
- 1 teaspoon pure vanilla extract
- 1 1/2 cups dark chocolate chips

- 1 cup peanut butter
- 1/2 cup butter
- 1 1/2 cups packed brown sugar
- 1/2 cup granulated sugar
